THE BEERS OF TENNANT BROS IN 1891

 How Do All , 

I`ve deleted the previous posts on the 1891 Tennant Bros beers as I wasn`t entirely happy with the results of my previous analysis ; This is primarily due to an increased breadth of knowledge re Sugars use in the brewhouse , derived from my research into the beers of a near neighbour of the Tennant Brothers at Woodlesford Nr Leeds ; Henry Bentley & Co Yorkshire Breweries Ltd 1892-4. 
( See tomorrow`s post on the Mild Ales of this firm ) 

The source material for today`s post is , The Brewing Book of E F Goddard 1891 @ MD 75182316 ,
Cared for by the ever helpfull and friendly team at Sheffield City Archives on Shoreham St .

The book contains brewing details such as the Gross Weight of materials used ; Malts , Sugars , Hops ; Original Gravities and occasionally the Wort Collected IN COPPER , and the length cast to the FV .
Sadly absent are the finite attenuation details , so these are my own interpretation based on period and regional practice .
  Conversion and interpretation of the records involved a lot of  complicated maths ,Calculation of the barrels collected @ Copper Up  ; Malt Extract per Quarter calculations which then allowed me to interpret the Sugars use and weight / Degreees to Copper ammount . 
All of the foregoing allowed me to determine the starting point of the boil ( Gravity ) and the average Wort Volume collected and balance the Sugars Used with the ( Where Given ) Final Wort Volume ;
The result of theis permitted me to calculate the IBU of the beers at each relative Hop Charge Point ,with a drop in alpha acid of the Hops used ( Relative to Period ) being an integral part of the process of analysis and interpretaion .

Due to the Malt used ( Branston Y/ String ) and relative bitterness & racking hop rate of this beer ,
 I`d tentatively suggest It`s an IPA in terms of beer type .

The " S " Beer could , due to it`s frequency of brewing ; And the final packaging format indications in the brewing book , be another Strong Ale as it also contains a relatively large Racking Hop Charge @ 4.75 Oz Per Barrel * 1891 .

KIRBY, WRIGHT & CO : 4 d ALE 1865

 How Do All , 

Here`s an infrequent brew from the earliest known commercial brewing record in a Public Archive from a Sheffield Brewery; The Brewing Book of Kirby,Wright & Co @ SHW 6/1/2/1 ; deposited with the helpful and friendly team at Sheffield City Archives on Shoreham St .

The brewing book of Kirby , Wright and Co does contain various details such as Malts & Hops used and Gravities , sadly it  doesn`t record brewlengths and only rarely does it record the initial liquor heat. 
a similar situation exists with the attenuation and yeast use records , though these are , sadly absent .
The records at the end of the book are from the time immediately before Septimus Ward`s purchase of the brewery outright in 1871 ; Happily these records do include ( occasionally ) some mashing and other details which have allowed me to extrapolate the brewlength yields and collection gravities used in the Kirby , Wright & Co beers .
  The Sheaf Island Brewery was established in 1837 by William Roper & John Kirby , with             George Wright joining the business in 1861 in turn they were joined by Septimus Ward in 1868  
who bought the business in 1871 . In 1876 , the entire concern removed  to the Soho Brewery
 of Bradley & Co , shortly after it`s purchase in 1876,  which was then promptly  re named 
" The Sheaf Brewery " , continuing to brew until 1999  when it regrettably ceased brewing  .

Some keen blog readers may have seen my appeals for assistance in accessing Old Brewing Records in previous blog posts ; Well thanks to the efforts of  Hai Pham over in Western Australia , I`m able to bring you this recipe . The EMU Brewing records are cared for by the team at The State Library of Western Australia in Perth , Cat No : MN 747 ACC 2834A/5 = 26.05.1913 - 16.02.1916

JOSHUA TETLEY & SONS Ltd : LIGHT BITTER 1935

 How Do All , 

Yesterday I had a reserach trip to look at some of the Tetley`s brewing records for a long term research project I`m working on ; At the same time , I thought that a few records from the 1930`s would yield some great beer recipies accordingly ; Here`s a nice and tasty Light Bitter Beer from Tetley`s for you all to enjoy .

This beer recipe is taken from information in the the 1935 - 1936 Brewing Book @ WYL 756 / 551 part the Tetley`s Archive , cared for by the ggod folks at West Yorkshire Archives in Morley ; Thanks for your assistance with my Yorkshire beer history research guys , It`s greatly appreciated .

                                  1  St Mash Heat : 65 c At 0 - + 45 Minutes = 8.820 Litres 
                           2 Nd Mash Heat : 66.5 c At + 45 - + 105 Minutes = 1.600 Litres 
At 105 Minutes , Slowly open the mash tun valve and return any Cloudy / Turbid 1 St Runnings OVER the Mash until CONSISTENTLY Clear & Bright ; ONLY THEN ALLOW TO THE Copper .
SPARGING : Sparge @ 74 - 72 c At Clear Wort to the Copper + 10 Minutes = 19.120 Litres ; 
At a Gravity of 1.003, STOP TAPS and Collect Wort in the Copper .

At Collection of Wort in the Copper , ADD Liquor to the Copper , REDUCING the Copper Gravity to 1.028.25 , THEN CONDENSE to 1.028.5 ON 28.000 Wort Litres In Copper @ Let Off - 120 Mins.

NB : Take Care to remove any Scum / Detritus floating on the Wort Surface BEFORE the 1 St Hops are added at Let Off - 120 Minutes AT 1.028.5 ON 28.000 Wort Litres .

WHITWELL MARK & Co Ltd : PALE ALE 1931

How Do All , 

Today`s post is from  Whitwell , Mark & Co of Kendal , Westmoreland .
Established as a Wine & Spirit Merchant`s Ca 1757 by John Whitwell , the concern was purchased in 1858 by William Mark , with a new brewery being built . 
The brewery was registered as a limited company in 1883 , and continued to brew independently until 1947 when Vaux & Co of Sunderland bought Whitwell,Mark & Co ; The brewery continued to brew until the 18 Th September 1968 when Beer production ceased .
The brewery and it`s buildings are , thankfully preserved and are now known as ,
The Brewery Arts Centre.

                       Thoroughly Pre Warm the Mash Tun to 90 c - 10 Before Mashing In 
                               Ensure the Liquor is 1.5 " ABOVE the Plates / Filter Bed 
                               1  St Mash Heat : 64.5 c @ 0 - + 30 Mins = 9.050 Litres 
                             2 Nd Mash Heat : 66 c @ + 30 - + 90 Mins = 1.000 Litres 
                             3 Rd Mash Heat : 67 c @ + 90 - + 120 Mins = 1.000 Litres 
At + 120 Minutes , Slowly open the Mash Tun valve and return any cloudy / Turbid 1 St runnings OVER THE MASH until Consistently Clear & Bright ; ONLY THEN allow to the Copper .

                                                   SPARGING   &   COLLECTION 
Sparge at Clear Wort to the Copper + 5 - 10 Minutes @ 71 c = 23.150 Litres , and at a gravity of 1.004,
STOP TAPS and Collect Wort in the Copper ; ADD LIQUOR to the Copper , Reducing the Gravity to 
1.039.75 , THEN CONDENSE to 26.000 Wort Litres IN COPPER @ 1.040 .
NB : 
Take care to remove any Scum / Detritus floating on the Wort Surface PRIOR to Let Off - 120 Mins .

Increasing the Copper Gravity to 1.041 and at Let Off - 12 Minutes, ADD the Copper Finings .
AT Let Off , STAND 10 Minutes then Recirculate IN COPPER for 10 Minutes BEFORE STANDING 1/2 Hour , THEN COOL A S A P to Pitching Heat .

MACLAY & Co : OAT MALT PALE ALE Ca 1909

 How Do All , 

Here`s today`s offering ; My interpretation of a possible recipe for Maclay & Co`s Oat Malt Pale Ale  .

The recipe is inspired by information contained in the 1909 - 1912 Brewing Book , Part of the Maclay`s Collection ( M ), from the Internationally imoportant Scottish Brewing Archive; 
The S B A is cared for by the team at The University of Glasgow Special Collections & Archives on Thurso St who were of great assistance on my last visit ; Thaks team , 
I really appreciate your help with my research into Scotland`s beery past .

                                        Use a Pale Ale Liquor and treat as for Stout Brewing  
                       Thoroughly pre warm the Mash Tun to 95 c - 10 Minutes before mashing in ,                                                         ENSURE the Liquor is 1.5 " ABOVE the Plates / Filter Bed 
                                   1  St Mash Heat : 66 c At 0 - + 90 Minutes = 10.500 Litres 
                              2 Nd Mash Heat : 67 c At + 90 - + 120 Minutes = 4.000 Litres 
At 120 Minutes , Slowly open the mash tun valve and return any turbid / cloudy 1 St Runnings OVER the mash until CONSISTENTLY Clear & Bright ; ONLY THEN ALLOW TO THE COPPER .

                                                                       SPARGING 
 Sparge at Clear Wort to the Copper + 10 Minutes at 82 - 76 - 72 - 68 c = 18.000 Litres , At a Runnings gravity of 1.003 , STOP TAPS and Collect Wort in Copper .

                                                  COLLECTION  &  SUGAR ADDITION 
           At Collection in Copper , ADD LIQUOR to the Copper , Reducing the Gravity to 1.023.25 ,
              ON 30.230 Wort Litres IN COPPER @ Let Off - X Minutes , THEN ADD SUGARS

               CONDENSE TO 30.000 Wort Litres IN COPPER @ 1.033 AT LET OFF - 105 Minutes 
            NB : Remove any Scum / Detritus floating on the Wort Surface BEFORE  L/Off -105 Mins

A 1 3/4 Hour Boil ON HOPS , 1 St Hops at Let Off - 105 Minutes ,At Let Off - 70 Mins + 2 Nd Hops .
At Let Off - 40 Minutes ON 24.220 Wort Litres in Copper , ADD 0.785 Litres of LIQUOR , Reducing the Copper Gravity to 1.038.75 ON 25.005 Wort Litres .At Let Off - 30 Minutes , ADD the 3 Rd Hop Charge and at Let Off - 12 Minutes , ADD the Copper Fiunings and at Let Off , 
STAND 10 Mins , Recirculate for 5 - 10 Minutes , then STAND 1/2 Hour after Recirculation 
                                                BEFORE COOLING A S A P to Pitching Heat  .

                                        1   St Hop Charge : To 30.000 Wort Litres @ 1.033 
                                                      14 IBU Fuggles @ 5.5 % a/a = 22.5 g

                                        2  Nd Hop Charge : To 26.360 Wort Litres @ 1.037

                                               7 IBU French Fuggles @ 4.2 % a/a = 13 g
