KIRKSTALL BREWERY BEERS IN 1885

How Do All , 

Here`s another analysis table for you all ; This time from the West Riding of Yorkshire ,          and a place just outside of Leeds , Kirkstall ! .

The records were , sent to me in confidence ,

so I`m sadly unable to share my excellent recipies from this well known Yorkshire brewery

This set of records unfortunately doesn`t contain any attenuation records , so those are my own interpretation ;  though happily the Malt Quarters ; Sugars by Cwt , Hop poundage per Quarter of Malt  are given ,  as are some liquor treatments .

 One interesting detail is that the original Kirkstall Brewery were , in 1885 using at least two different yeast strains ; One " Own from X No of Brew and a smaller ammount from the Noted  Burton brewery of Sir Andrew Barclay Walker on Shobnall Rd .

ALEXANDER BERWICK & Co : BEERS August - December 1849

 How Do All , 

After finalsising the rough draft of my 1 St book of Historic beer recipies , I bagan to look anew at some of the historic Scottish brewing records I`ve got photos of .... To Date !!! , The table below is a completely fresh analysis of the  Alexander Berwick & Co ; Brewhouse Book 1849 - 1852 .

This individual record ( @ Cat No  @ B K ) forms part of the internationally important Scottish Brewing Archive , held by the team helpful team at The University of Glasgow ; Archives & Special Collections Department .

 

The brewery was established by Alexander Berwick sometime before 1849 and was the brewery which occupied a substantial part of the site which later became Wm Younger & Co`s Holyrood Brewery .

TADCASTER TOWER BREWERY LTD : BEERS IN 1885 - 1886

 How Do All ,

Here`s the first analysis table from the records of the Tadcaster Tower Brewery Co Ltd , The Brewing Produce books maintained by the general manager of the company , Tripp from the mid 1880`s until 1891 .

These series of books provide the only data in publicly availabe archives related to brewing from the Tadcaster Tower Brewery , and as they suggest they are , a Brewing Produce Book which records the ammount of Malt used , Sugars and barrels racked down with the original gravity of the beer also being listed .                                                                            Regrettably , as a condition of access to these records , I`m unable to publish recipies without the specific permission from the records owner , a condition I`m happy to agree to.

Sadly there are no mashing , coppering or attenuation details listed , thus the attenuation , Racking and Final gravities are my own interpretation , based on period practice and other clues , some of which are given in a book on the history of the brewery by Anthony Avis ,   " A Brewer`s Tale , A History of Ale in Yorkshire " , Radcliffe Press 1995
