Today`s post relates to the brewings of Bitter Beer as entered in the 1892 - 1894 Brewing Book,
From the Bentley`s Yorkshire Breweries Collection deposited with the ever helpfull & friendly team at, West Yorkshire Archives Morley branch : Catalogue No : WYL 2045 / 288 / 106 .

BITTER BEER 1892 - 1894
The lowest in terms of original gravity of the Bitter Beers & Pale Ales Ex Eshaldwell
This beer , in common with the other H B beers employed a number of different malts thoughout
the 1892 - 4 book , here are some sample grists from December - 1892 - June 1893 ;
Tuesday 15 Th December 1892 : Brew No 52 Yorkshire Pale @ 41 %
Yorkshire Amber @ 28 %
Smyrna @ 15.5 %
Ipswich @ 15.5 %
Thursday 21 St February 1893 : Brew No 91 : California " C " @ 34.5 %
Ipswich @ 20.75 %
Yorks Amber @ 24.25 %
Smyrna @ 20.5 %
Wednesday 14 Th June 1893 : Brew No 168 : California C @ 18.25 %
Ipswich @ 22.75 %
Yorkshire @ 36.5 %
After June 1893 , various other extract malts were used in the brewing of B B in addition,
To the now ubiquitous " Smyrna " From 76 % Ipswich in Brew No 192 , Yorkshire @ 79.5 % in ,
Brew No 218 and 82 % Yorkshire in Brew No 260 .
In early October 1893 , the grist of B B changes slightly to us a " Yorkshire Pale " in addition to
The Smyrna malt Viz;
Wednesday 4 Th October 1893 : Brew No 8 : Yorkshire Pale ( Musgrave ) 69.75 %
Smyrna 30.25 %
Tuesday 5 Th December 1893 : Brew No 75 : Yorkshire Pale 79.5 %
Smyrna 30.5 %
After early December 1893 , ALL brewings of B B feature a proportion of " Yorkshire Amber "
As a regular inclusion in the grist as per the following example ,
Wednesday 7 Th March 1894 : Brew No 115 : Yorkshire Amber 45.5 %
Yorkshire Pale 36.5 %
Smyrna 18 %
SUGARS & RACKING HOP USE
The various brews of B B employed variation in both the type of Sugar used ; and the degrees contributed to the beer ( Calculated as a % of the gross extract poundage / Original Gravity )

As the eagle eyed amongst you may notice , there`s a fair ammount of disparity between the
Assumed Racking Hop varieties Viz : Saazer / Hallertau , Goldings type and the charge weight ratiae;
I believe that this difference could be explained by a certain trading area within the brewery`s sphere of operations commercial requirements Viz ; The area`s level of trade made the production of minor variants of B B economically viable / desireable .
