In today`s post , I`ll be taking a look at the Pale & India Pale Ales as entered up in the
1892 - 1894 Brewing Book @ WYL 2045 / 288 / 106 ; Part of the B Y B Collection,
Cared for by the helpfull and friendly team over at WYAS Leeds ( Morley ) .

PALE ALES 1892 - 1894
As the taxonomy suggests , This is a Pale Ale which IMO would be more akin to that mighty
drop : Draught Bass in terms of general style perameters , though with an increased Original
Gravity . A product that would have been available in both Bottled and Draught formats .
As with other brewings in the 1892 - 4 book , This beer employs various proportions
of Main Extract Malts with an admixture of the ubiquitous " Smyrna " malt
Sample Grist : 29 / 12 / 1892 : Brew No 65
California 40 %
Ipswich 40 %
Smyrna 20 %
The grist Make Up was simplified by September 1893 : Sample Grist : Brew No 283
Yorkshire 80 %
Smyrna 20 %
A similar proportion was used in the last two brews of Pale Ale , 80 % Danish & 20 % Smyrna.
Racking Hops : A surprising degree of variance in the varieties that were used in Cask ;
Viz; Brew No 65 : @ 12 Ounces / Barrel " Bavarian Kleiber 1892 "
Brew No 61 : @ 12 Ounces / Barrel : " Worcester Cook 1893 "
Brew No 84 : @ 11.75 Ounces / Barrel " Sussex Lord 1893 "
The maturation period of the Draught product line would , I believe have been subjected to
a minimum period of between One and Three Months with an initial period at 12 - 13 c ,
Then at 6 - 8 c until one week before the beer`s despatch to trade , then @ around 12 c for 1 week.

This Pale Ale was brewed a mere 13 Times between December 1892 and January 1894
INDIA PALE ALES
As the brewery taxonomy suggests , this was an I P A , employing a similar grist to the other
Henry Bentley & Co beers , Viz ; Brew No 72 Thursday 12 Th January 1893
Yorkshire ( Pale ) : @ 44.5 %
California " C " @ 38.5 %
Smyrna @ 19.25 %
Brew No : 130 : Friday 21 St April 1893
Ipswich @ 42.25 %
Californian @ 38.5 %
Smyrna @ 19.25 %
By Mid August 1893 , the grist had changed to use two malts ;
Brew No : 231 : Friday 18 Th August 1893
Yorkshire @ 81.5 %
Smyrna @ 18.5 %
By December 1893 , the I P A used the same malts as it`s stablemate Pale Ale ,
with the last two entries / brews of I P A using 81.5 % Danish and 18.5 % Smyrna Malts .
As with the Pale Ale , this beer would have been subjected to a period of maturation before release
In either Bottled or , Draught packaging formats .
