WARWICKS & RICHARDSONS : H a MARCH 1910

How Do All ,

Thanks to the helpfull team at Nottinghamshire Archives , where the 1910 Brewing Book from W & R is deposited @ DD /  NM  /  8 / 4 / 1 , I`m happy to be able to bring you this tasty little beer from Newark On Trent ; allthough it`s a meagre 3.1 % ABV as calculated , this sort of beer would have been brewed to be consumed quickly , I`d estimate within 2 - 3 weeks at most from the brewing date ; An ideal Light bodied beer to have with a snackette such as a Ploughman`s Lunch etc .

     Original Gravity : 1.036.75  Racking Gravity : 1.012.75 Final Gravity : 1.010
                    RECIPE FOR 31 . 0 WORT LITRES @ 1.027 TO COPPER 
                                                  75 % Mash Efficiency
                                     MALTS & ADJUNCTS 
                                  37      %       Mild  Ale Malt             = 1.375 Kg
                                  36       %      Pale Ale @ 6 - 9 ebc    = 1.320 Kg
                                    2.75  %     MED Crystal Malt        = 0.115 Kg
                                  24.25  %     Flaked Maize                = 0.880 Kg
MASHING : Pre Warm the Mash Tun to 90 c - 10 Minutes before mashing in as below ; Ensure the Liquor In Tun is at least 1.5 " ABOVE the filter bed / plates before mashing in, As you are mashing , take up to 20 - 25 Minutes to attain the MASH HEAT .
                       MASH HEAT : 66 c AT 0 - + 90 Minutes = 9.910 Litres 
At TAPS ( 90 M) slowly open the tap and return cloudy runnings over the mash , then ONCE CONSISTENTLY CLEAR , begin to Incrementally increase the flow after the first 10 minutes of running to the copper , THEN START SPARGING ;
       Clear Wort + 10 Mins @ 74 - 71 - 69 c = 34 . 800 Litres OF LIQUOR , then at a gravity of 1.003 STOP TAPS and COLLECT WORT in copper ; ADD LIQUOR to bring the gravity in copper to 1.026.75 ; then CONDENSE to 1.027 with 31 . 0 Wort Litres in the copper , THEN START THE BOIL CLOCK .
                                     SUGARS 
                    No 3 Invert @ 1.006  / 16.44% = 0 . 120 Kg 
Boil 6 . 750 Litres of Brewing Liquor for 15 Minutes , then / Once AT 6.400 Litres  
ADD the No 3 Invert and SIMMER to 6 . 200 Litres, then ADD TO COPPER as below .
                                    COPPER 
A 1 3/4 Hour Boil ON HOPS , 1 St Charge at Let Off - 105 @ 1.027 . 
At Let Off - 50 - 45 Gravity @ 1.032.5 ; then ADD (Brewing Liquor and Sugars)
Thus a CONSTANT gravity ON 30.310 L of WORT ; Condense to Let Off - 30 / 1.033  then ADD the 2 Nd Hop Charge to the copper . AT let off - 12 Minutes , ADD copper finings and at Let Off - 2 Minutes , 
ADD COOLED AND CLEAR BLACK MALT BROTH to colour to the wort to, 
 desired levels as did the brewery when this beer was produced in 1910 .
Annoyingly , no quantative value measurement system is indicated or given where the colour is recorded in the brewing book ; thus I`d suggest somewhere around 28 - 30 EBC  would , be acceptable for a beer of this class .

                First Charge :   31.0 WORT LITRES @ 1.027                                                     Fuggles @ 4 % a/a = 8 g  4 IBU
                                        Aramis  @ 6 % a/a = 7 g  5 IBU     
       Second Charge :   30 . 845 Wort Litres @ 1.033
                             Fuggles @ 4 % a/a = 9 g 4 IBU
                                        Aramis   @ 6 % a/a = 9 g 6 IBU 
                                   RACKING HOPS 
            To 25 . 5 Litres in DRAUGHT CONTAINER : 4.5 g Brewer`s Gold 
                  YEAST
                Pitch  64 g Live Yeast @ 15.5 c Suggested Strain : Edinburgh Type

STAND 2 Days at 16 - 18 c then CELLAR @ 10 c for 1 WEEK then ADD FININGS and ROLL WELL , STILLAGE @ 10 c ONE WEEK , VENT @ S + 7 Days and allow between 12 and 24 Hours for the beer to clear and condition before Q C                                  
                                  BLACK MALT BROTH 
Take Eg  ( X )   Litres of Brewing Liquor and Boil for 15 Minutes , 
Then PER  0 . 500 L of LIQUOR ADD 0 . 050 g Black Malt and SIMMER 5 Minutes , 
ADD FURTHER ADVANCES in 0 . 005 Kg Increments until the desired colour is reached , THEN LET OFF SIMMER / HEAT , Stand and the COOL AS RAPIDLY AS POSSIBLE to 10 - 12 c then ; once settled @ 12 c , Bottle or , put into a container , then in the fridge .

GREENALL`S ( St HELENS ) BEERS 1885 - 1886

How Do All , 

Thanks to the good folks at Cambridgeshire Archives ( Huntingdon ) and the team in the reprographics department , I`m very happy to be able to bring you this table of beers from a VERY well known name in Lancashire brewing history , that  of Greenall .

The source of this discovery ? ; A Pupil Brewer`s Notebook from the 1880`s , those of           " A . R Lowe , Pupil of F C Harvey Esq , The Brewery , St Helens " which ,                   forms part of the Lowe ,Son & Cobbold collection @ KHAC 2 / 2531 / 1 ,

There are two other Brewing Books listed in that collection , another brewing journal inscibed " A R Lowe " 1889 - 1891 @ KHAC 2 / 2531 / 2 and one , presumably from the company`s own brewery @ KHAC 2 2531 / 3 Brewing Journal 1894 - 1904

 The brewery in St Helens was founded in 1762 by Thomas Greenall , and for the next 20 years was the epicentre of the family`s brewing interests . The brewery at St Helens was to lead an odd , Quasi independent life as part of the Greenall - Whitley Brewing interests until the mid 1930`s when the remaining privately held shares in the St Helens firm were bought by the Wilderspool based Greenall`s concern .                                                             
Sadly the Hall St brewery founded by Thomas Greenall in 1762 brewed it`s last drop of beer in the 1970`s ( Cited as being April 1975 from Brewery History Society data ) .

WARWICKS & RICHARDSONS BEERS IN 1910

 How Do All ,

Here`s the results of my most recent research project ; a sampling of the beers contained in the 1910 Brewing Book of  Warwicks & Richardsons located in the Nottinghamshire Archives  , Catalogue No : DD / NM / 8/4/1  .                                                                         There are quite a few different beers in the ledger ranging from X Ales to IPA , Home Brewed and even Two Stouts !! 

If there are any blog readers who are able to send me photos of old brewing records , please get in touch , I`d love to hear from you ;  all Blogposts and writings to use info and photos sent will , be credited to the author / sender and the relevant Archives / Materials Source ; and where requested , the source will remain confidential .

E M U BREWERY Ltd : BEERS IN 1913

 How Do All ,

During my time away from blogging I`ve been able to increase my knowledge of both techniques and ingredients in historic brewing records and notes ; including their interpretation and conversion .

As with all blog posts where others contribute source materials and guest posts ;

I`ll be posting more tables like this, brewery histories and even some new , Nice and reasonably accurate improved home brew recipies  for between 25 - 26.5 L of Beer to Draught Container / Bottling C . V ;  On that note , the recipies are designed for those Home Brewers who have a Minimum 3 Vessel set up , IE A Hot Liquor Tank, Mash Tun and Copper / Boiler and whilst I understand that Unitary base I  process home brew systems are available ; and deservedly popular for their ease of use , there are I believe some specific points in the manufacturing process re accurate reproduction of Old Beers ; that are I strongly believe ,  Key to a bearing point  relative to a more accurately reproduced historically authentic beer .

ARCHIVES VISIT : NOTTINGHAMSHIRE ARCHIVES

 How Do All , 

Welcome to the new blog ,containing all sorts of beer related facts , information and even some historic recipies based on the records I`ve managed to dig up ; or have been sent .

At the beginning of this month , I slowly ambled into Bolton ; stopping off at the excellent Odessa Cafe on Exchange St for a rather tasty Bacon & Mushroom on toast and coffee before making my way to the train station ; catching the train for Manchester Piccadilly I passed through the site of Clifton Junction ;

 "Where on the 12 Th of March 1849 , there was a Pitched Battle between employees of The Lancashire & Yorkshire Railway and those of The East Lancashire Railway ; after the L & Y R blocked the line to prevent the E L R from running trains in an argument over fare inspection on freight and passengers ; later parts of this dispute involved the imprisonment of passengers at Manchester Victoria " !!! .

where in in the early 1830`s Daniel Marshall was born ( The other half of Magee , Marshall & Co )  , then into Sheffield  and exchange for the  Nottingham service , a comfortable journey of an hour or so brought me to Nottingham by lunchtime . A brief snackette and cuppa later and i was walking along the Beeston canal towpath towards the archives   ( 10 - 15 Mins walk from the train station ) .

On arrival at the archives , I was kindly assisted in sorting out the necessary procedures ; providing the required ID for an Inspire Card , ( necessary to examine original documents ) after putting the bag and pens into the locker , I was admitted into the search room where the doccuments I`d pre ordered were awaiting me .

After the photography of records was over , 5 Pm was fast approaching ; so after thanking the staff for their efforts on my behalf , I made my way outside and walked round to the oldest Pub in England ; Ye Olde Trip to Jerusalem where some welcome pints were enjoyed and in Excellent condition too !!

As time ticked slowly by , I realised that the train home sadly beckoned me ; after a pleasant journey back I arrived back in Bolton slightly travel worn yet happy to have been able to make my first research trip in Two Years !
