DUDGEON & CO : No 4 ALE 1871

How Do All ,

Following on from the post earlier this week , here`s a Victorian Scottish Keeping Beer ,  As brewed by Dudgeon & Co for you all to try . 
As I`ve commented in other blogposts regarding brewing records , On occasion brewing production records do mention Mash Heats and , ratiae of Grist to Liquor ; Sadly the latter is absent in the 1881 . 1882 and 1883 records contained in the Brewing Book of William J Clark 1875 - 1883  ;

                            2 Nd Mash Heat : 69 c At + 90 - + 120 Minutes = 10.205 Litres 
At + 120 Minutes , SLOWLY open the Mash Tun Valve and return any Cloudy / Turbid 1 St

Here`s an I P A from Wells & Winch of Biggleswade for you all to try out , taken from the Wells & Winch Brewing Book 1906 - 1921 ; Part of the Collections of the helpfull team at Bedfordshire Archives , Cat No : GK/B1/1 .

MARK BINNIE & CO : H B 1904

 How Do All , 

Here`s a simple and tasty historic Scottish recipe for you all to try  from the Edinburgh brewery of Mark Binnie & Co . Mark Binnie learned his trade at the Edinburgh brewery of Morison & Thomson ,
 before moving to County Durham where he was employed by C F & M Forster ; returning to Edinburgh in 1881 when he began building the Nungate Brewery ( Brewing by 1882 ).                                                                          
The brewery continued under the ownership of Mark Binnie until his decease in 1924 , when the business was inherited by William Binnie , continuing until 1937 when it was bought by it`s larger local rivals , William Younger & Co .

PETER WALKER & SONS : PALE ALE 1916

How Do All , 

Here`s a counter to the last Pale Ale recipe from the ` Other` side of the hills ; 
This time from one of my personal favourite breweries , Peter Walker & Sons .
This recipe is my interpretation of the information contained in the 1916 Brewing Books deposited  with the good folks at Liverpool Central Library and Archives on William Brown St ; 
Surely one of the most pleasing vistas to greet an enthusiastic researcher after walking over from
 Lime Street Station and past the sheer magnificencence of  St Georges Hall .

Wm DARLEY & CO : STOUT PORTER 1881

 How Do All , 

Thanks to the assistance of the very helpfull team at Doncaster Archives , I`m happy to be able to bring you my version of the earliest known Darley`s of Thorne beer ; One simply labelled as S.P in the  1881 - 1890  Brewing Book @ DY / DAR / 2 ; An appelation I`ve interpreted as being either a Stock or , 
a Stout Porter ; with ( IMO ) only the relatively low Original Gravity precluding the former Type of Beer . 
                                                  Wm Darley & Co ,  A Brief History 
The brewery has it`s origins in the small brewery estabished by the Whitfield family on the
 King St Site , which was also probably the site of Charles Darley`s ( father of Wm Marsdin Darley ) brewery which was certainly in operation by 1837   1 ) . 
The brewery to which this Brewing Book`s origins lie was , founded by William Marsdin Darley in the mid 19 Th Century ; certainly by 1850 when a Mr Acaster was recorded as buying 9 Gallons of beer from Mr Darley ( 1 )   , and by the early 1860`s the plant &c were worth  
£ 1,000  and 4/-  (  Approx £ 99 , 637.53 in 2022-23 Values ) ( 2 ) 

The brewery continued to prosper under the stewardship of the founder when by 1879 he was joined by C . W Darley who took over the running of the firm in 1892 when the founder died at the age of 65 . His son who had no doubt been thoroughly educated in the Brewing Trade, saw the virtues of limited expansion as, by 1903 the noted Brewery Architect Wm Bradford`s design for the ` New ` brewery was completed and the vista of that part of King Street changed to the view on offer today . 
C W Darley died in 1926 , with the brewery being then run by Mr C F Darley
( Who was also a Maltster at Milnthorp`s of  Barnby Dun ) & Mr Thomas Bladworth Darley  , 
who continued to manage the affairs of the brewery after his brother`s death in late 1933 .
The company continued to independently brew it`s renowned ales throughout the intervening 75 Years since the New brewery`s commision in 1903, Until 1978 when the brewery was bought by it`s North Eastern neighbours ; Vaux of Sunderland who continued brewing at Thorne until September 1986 when the brewery sadly closed .

ADD 4.690 Litres of Liquor , REDUCING the Copper Gravity to 1.051 ON 28.595 Wort Litres .
At Let Off - 30 Minutes , ADD the 3 Rd Hop Charge then at Let Off -12 Minutes . ADD the Copper Finings then at Let Off ( 150 Minutes ) , STAND the Copper 1/2 Hour then COOL A S A P .

PS : I know the Plumeage Archer wasn`t introduced until the 20 Th century however , 
Ive designed this Malt Grist to better replicate the flavours and mouthfeel of those used in the period where a direct substitute isn`t possible E G : Goldthorpe  etc .

SANS PAREIL PALE ALE , 2023

How Do All , 

Here`s today`s recipe ; It`s a Simple One Mash Heat recipe that  I`ve designed to celebrate the release of a Historic Malt variety by the folks at Warminster Malt ,  Plumage - Archer ; A variety originally developed by Edwin Sloper Beaven in 1905 .

This version of the recipe is for 29.500 Wort Litres to the Copper @ 1.036 , 75 % Mash Efficiency 

                                                                    SANS PAREIL 
                                                                           Pale Ale 
                 Original Gravity : 1.052 Racking Gravity : 1.013 - 1.012.75 Final Gravity : 1.010
                                                          I B U : 42               A B V : 5.75 %  

                                                                           MALTS  
Warminster Malt : 
                             Plumage - Archer           @ 85 % = 3.980 Kg 
                             Maris Otter                     @ 15 % = 0.700 Kg 


                                                MASHING , SPARGING & COLLECTION
             Use a Pale Ale type brewing liquor , and thoroughly Pre Warm the Mash Tun to 90 c ,
       - 10 Minutes BEFORE Mashing In , ENSURING that the Liquor is 1.5 " ABOVE the Plates 
                                        MASH : At 66 c FOR 2 HOURS = 11.310 Litres 
At TAPS ( 120 Mins ) , SLOWLY Open the Mash Tun valve and return OVER THE MASH ,
Any Cloudy / Turbid 1 St Runnings UNTIL CONSISTENTLY BRIGHT & CLEAR ,
                                                         THEN SEND TO THE COPPER 
SPARGING : @ Clear Wort to the Copper + 10 Minutes , SPARGE @ 74 c = 26.140 Litres 
At a RUNNINGS GRAVITY of 1.004 , STOP TAPS and Collect the Wort in Copper .
COLLECTION : At Collection , ADD LIQUOR to the Wort in Copper , REDUCING the Gravity to ,
1.035.75 ON 29.705 Wort Litres IN COPPER , THEN CONDENSE To 1.036 on 29.500 W/Litres .

                                     1 St Sugar Charge : To 27.090 Wort Litres @ 1.039 
                                         1.006 No 1 Invert Sugar @ 11.54 % = 0.510 Kg

                                     2 Nd Sugar Charge : To 27.585 Wort Litres @ 1.044 
                                         1.003.5 Invert Candy Cane @ 6.74 % = 0.305 Kg 

                                    3 Rd Sugar Charge : To 26.130 Wort Litres @ 1.050 
                                          1.001 No 2 Invert Sugar @ 1.93 % = 0.085 Kg 

                                                                       COPPER 
A 1 3/4 Hour boil ON HOPS ; 1 St Hop Charge @ Let Off - 105 Minutes , then @ Let Off - 80 Mins ,
ADD the 2 Nd Hop Charge . At Let Off - 70 ON 27.090 Wort Litres @ 1.039 , ADD the 1 St Sugars .
At Let Off - 35 Minutes ON 25.285 Wort Litres @ 1.048 , ADD 2.300 Litres OF LIQUOR to the Copper , REDUCING the Gravity to 1.044 , then ADD the 2 Nd Sugar Charge .
At Let Off - 30 Minutes , ADD the 3 Rd Hop Charge .
@ Let Off - 12 Mins , ADD the Copper Finings and at Let Off - 5 Minutes , ADD the 3 Rd Sugars .
At Let Off ( 105 Minutes BOIL ) , STAND the Copper 1/2 Hour .

                                          6 IBU Saazer @ 3.5 % a/a  = 15 g 
                                          6 IBU Hallertau Heresbrucker  @ 3.5 % a/a  = 15 g 

                                     2 Nd Hop Charge : TO 27.450 Wort Litres @ 1.038.5 
                                         6 IBU Brewer`s Gold @ 6.5 % a/a  = 8 g 
                                         6 IBU East Kent Goldings @ 6.5 % a/a = 7 g

                                     3 Rd Hop Charge : TO 27.585 Wort Litres @ 1.047.5 
                                         6 IBU Hallertau Heresbrucker @ 3.5 % a/a = 16 g
