Here`s the final post in the series on the beers of Henry Bentley & Co Yorkshire Breweries Ltd 1892-4

As with the other posts on the beers as brewed at Eshaldwell , this analysis is drawn from the information contained in the 1892 - 1894 Brewing Book that`s part of the larger archive of the succeding firm , Bentley`s Yorkshire Breweries Ltd ; the records are cared for by the ever friendly & helpfull team over in Leeds at West Yorkshire Archives, thanks to the team for their assistance with my research into Yorkshire`s beery history , It`s really appreciated .

A Traditional Yorkshire strong ale whose origins possibly lie in the products of Henry Bentley`s 
Father`s brewery , The Lockwood Brewery , Huddersfield in the late 18 Th Century.
 
As with other H Bentley & Co Yorkshire Breweries Ltd beers , this beer features an average 
Or usual Grist Make Up of 80 - 84 % Yorkshire , with the remaining portion taken up by the
ubiquitous Smyrna Malt @ 20 - 16 % .
In common with the other Strong Ales ,Porters and Stouts brewed at Eshaldwell 
( from the 1892 - 1894 Brewing Book) , this beer also features Invert Sugars and , 
the admixture of a cooled and clear Black Malt broth* and Caramel @ X point during the boil .
* Use changes to x Bushels of Black Malt by November 1893

The racking hop addition rate does change in line with variety and Crop Year changes ; from 
" Bavarian , Kleiber 1892 " at the rate of 3.5 Ounces / Std Barrel @ 36 Gallons in Brew No 60 , 
to the same ratio applied to Brew No 205 but using " Kent Stace 1892 " as the hop of choice ;
Other additions are : Brew No 31 @ 7.5 Ounces / Brl " Worcester Cook 1893 " with a return to the more prevalent Racking Hop rate of 3.5 Ounces / Brl in Brew No : 85 " Sussex Lord 1893 " .

BARRETT`S BREWERY Co Ltd : STOUT 1886

How Do All , 
Today`s recipe comes from a London brewery , Barrett`s Brewery , Vauxhall ;                                        The source of the brewing information are The Brewing Books of Arthur J Baily 1886 - 1893 ,
whilst he was a brewer at the Wandsworth Road site .
The particular book this recipe is drawn from is composed of a mere Two beers ,
 a Stout as per today`s cerevesian delight , and a Pale Ale type . 
At the rear of the June - Novemeber 1886 Brewing Book are references to the production of Barrett`s       2 /6 Stout which involved the blending of Old Ales and Stout  and the use of Mustard !!!, which was added to the Old Ale Barrels 24 Hours BEFORE blending with the 2 /6 Stout .  

Barrett`s Brewing & Bottling Co was founded in 1883 , though by 1904 , the brewery had closed ( 1 ), With the site back in production by 1907 when The Vauxhall Brewery Co were in occupation of the Wandsworth Rd Brewery after a merger with Plowman & Co , the business then being carried on under the style of , Plowman , Barrett & Co Ltd .
 The Wenlock Brewery Co Ltd purchased the company in 1951 ; 
Sadly I`ve found little to no other   data on brewing at Barrett`s other than the A J Baily brewing books , even a cessation of Brewing date is still proving elusive !!

The A J Baily brewing books are part of the Brakspear`s Collection , cared for by the ever friendly and helpfull team at Oxfordshire History Centre on Temple Rd in Cowley ; Thanks for all your assistance when I visited on Tuesday last , I really enjoyed my first visit .

Today`s cerevesian delight is the most common type of X X X X Ale as brewed at Eshaldwell , the Dark version ; I`ve chosen the last brewing of the dark x x x x ale on the 24 Th January 1894 for today`s recipe , I hope you all enjoy brewing it , and a few months later ; It`s Quality Controll .

 How Do All , 

Today`s outpouring of cerevesian lore relates to the X X X X ales brewed at Eshaldwell ,                     As entered in the Henry Bentley & Co Yorkshire Breweries Ltd Brewing Book 1892 - 1894 ;  Catalogue No : WYL 2045 / 288 / 106 this volume forms Part of the larger Bentley`s Yorkshire Breweries Collection , Cared for by the ever friendly and helpfull team over in Morley at West Yorkshire Archives.

The X X X X Ales brewed at Eshaldwell fall into One main sub type and a couple of ` Odd ` brewings as Described below , The most prevalent type being the one with Sugars , Caramel and Black Malt Broth or,An addition of Black Malt . The other two types were only brewed twice and once respectively ; Yet are different enough in terms of ingredients to warrant taxonomy .

Type 1 : A Dark , strong ale in a similar vein to the Old Timothy brewed in Woodlesford ; 
yet featuring an admixture of Black Malt Broth at an average Volume of 16 Gallons per brew 
in the majority of the entries prior to 1894, when it was replaced by the addition of Black Malt @ 2 Bushels ( Av ) ; All this was carried out at  X Point in the brewing process / day .

Here`s a recipie I`ve written from the information contained in the Brewing Notebook of                 
Robert Ridland Tait ; Part of the internationally important Scottish Brewing Archive , cared for 
By the ever helpfull and friendly team at The University of Glasgow Special Collections & Archives .

As with my analysis earlier this week of some selected brews of Mc Ewan`s as brewed at the Old 
Fountain Brewery ; The Attenuation , Pitching Rate and Racking Gravities are absent , so the gravities 
below are my own interpretation based on period practice etc .

Warminster Malt :                34.5    %    Plumage Archer = 1.515 Kg 
                                             10       %    Vienna                = 0.445 Kg
Crisp Malt                            15.75  %    Scottish Ale        = 0.690 Kg
Crafty Maltsters                   25.75  %    Pop`s Pale Ale    = 1.135 Kg

                                     FLAKED BARLEY            14        %   =   0.600 Kg   

                                           MASHING , SPARGING & COLLECTION 
                                          Use an Edinburgh / Lightly Burtonised Liquor 
         Thoroughly Pre Warm the Mash Tun with Liquor @ 95 c - 5 - 10 Minutes Before Mashing In 
                 Ensure the Liquor is 1.5 " ABOVE the Plates - 10 Minutes BEFORE Goods In 
                         1   St   Mash  Heat  :  64 c At      0 - + 120 Minutes = 11.800 Litres   
                         2  Nd  Mash  Heat  :  67 c At + 30 - + 120 Minutes =   3.600 Litres 
At 120 Minutes , Set Taps and clear wort by return OVER the mash until consistently clear & bright ;
                                                     ONLY Then send to the Copper  
At Clear wort to the Copper + 5 - 10 Minutes , Sparge at 76 - 73 - 68 c = 21.950 Litres and at a 
Gravity of 1.004 , STOP TAPS and Collect Wort in the Copper ; ADD Liquor to the Copper ,
REDUCING the Copper Gravity to 1.037.75 on 28.200 Wort Litres in Copper ,
                 Then CONDENSE to 1.038 on 28.000 Wort Litres in Copper @ Let Off - 90 Minutes

                                                       1.001.75  No 3 Invert = 0.170 Kg 

                                         PRIMINGS : 1.001.75  No 3 Invert = 0.140 Kg  
                                                           To 25.200 Wort Litres IN F V     

                                                                          COPPER
                                                           A 90 Minute Boil ON HOPS 
1 St Hop Charge @ Let Off - 90 Minutes , then at Let Off - 65 Minutes ON 25.790 Wort Litres ,
ADD 4.860 Litres of LIQUOR , Reducing the Copper Gravity to 1.034.5 then ADD the No 3 Invert.
 At Let Off - 30 Minutes , ADD the 3 Rd Hop Charge then at Let Off - 12 Minutes add the Copper 
Finings and at Let Off ; STAND 10 Minutes then Recirculate IN COPPER for 10 - 15 Minutes ;
                             THEN STAND 30 Minutes THEN COOL A S A P to Pitching Heat .

                                           1  St  Hop Charge : To 28.000 Wort Litres @ 1.038
                                                    6 IBU  Bramling Cross @ 6.5 % a/a  = 8 g  

                                           2  Nd  Hop Charge : To 30.015 Wort Litres @ 1.037
                               5 IBU Fuggles @ 5.5 % a/a = 8 g , 4 IBU Goldings @ 6 % a/a = 7 g 

                                           3  Rd  Hop Charge : To 27.580 Wort Litres @ 1.040
                              4 IBU Fuggles @ 5.5 % a/a = 6 g , 5 IBU Goldings @ 6 % a/a = 7 g 

                                                                          YEAST
                                         Pitch with 70 g Weight of a LIVE Yeast @ 15.5 c 
                                                      To 25.510 Wort Litres @ 1.043

H BENTLEY & Co YORKSHIRE BREWERIES Ltd : PALE ALE 1892

Today`s post is a recipe for the Pale Ale of Henry Bentley & Co Yorkshire Breweries Ltd , 
 It`s taken from the 1892 - 1894 Brewing Book that`s part of the Bentley`s Yorkshire Breweries Ltd 
Collection , deposited with the ever helpfull and friendly team at West Yorkshire Archives 
whose Leeds searchroom is located on Neepshaw Lane South at Morley .

The Pale Ales do slightly differ in the Sugars employed ; From a mixture of Inverts Glucose and Cane,
To the exclusive use of either Glucose or Cane Invert Sugars in some brewings . Pale Ale hop use in the Copper at Eshaldwell was generally consistent throughout the 13 brewings 1892 - 1894 , 
constantly featuring the use of ` Aged ` hops in the 1 St Charge @ Let Off - X Minutes ;

To the Copper from the Mash @ 1.036 ; with the Sugars Addition @ Let Off - 125 Minutes ( Approx ) 
                      = At Let Off - 120 Mins 30.000 Wort Litres at Copper Up @ 1.050

                                                                       MASHING 
                                                         Use a Pale Ale type Liquor
           Thoroughly pre warm the Mash Tun to 90 c - 10 Before Goods In , 1.5 " Above the plates .
                                 1 St   Mash  Heat  : 64 c At     0 - +    25 Minutes = 12.100 Litres         
                                 2 Nd Mash   Heat  : 67 c At + 25 - + 120 Minutes =  4.825 Litres  
At 120 Minutes , slowly open the mash tun valve and return any cloudy / turbid 1 St runnings ;
Over the mash until consistently clear & bright , Only send to the Copper @ Clarity + 5 Minutes .

                                                         SPARGING  &  COLLECTION  
 Sparge at Clear Wort to the Copper + 5 - 10 Minutes , AT 72 c = 20.200 Litres , then at 1.004 ;
STOP TAPS / Shut Off Mash Tun Valve and Collect Wort in the Copper . At Collection , 
ADD Liquor to the Copper , REDUCING the Gravity to 1.036 ON 30.155 Wt Litres then + SUGARS ;
             CONDENSE to 1.050 ON 30.000 Wort Litres IN COPPER @ Let Off - 120 Minutes .

                                           1.013.75 Invert Glucose @ 24.02 % = 1.355 Kg

                                                                        COPPER 
                                                            A 2 Hour Boil ON HOPS  
       1 St Hop Charge @ Let Off - 120 Minutes , then at Let Off - 90 Minutes , ADD the 2 Nd Hops .
At Let Off - 65 Minutes ON 26.400 Wort Litres IN COPPER @ 1.056 , ADD 2.735 Litres of Liquor ,
Reducing the Copper Gravity to 1.050.75 , then at Let Off - 60 Minutes , ADD the 3 Rd Hop Charge.
  At Let Off - 12 Minutes , ADD the Copper Finings then at Let Off , STAND 10 Minutes ;
RECIRCULATE IN COPPER 10 - 15 Minutes , then STAND 1/2 Hour before COOLING A S A P . 

                                                                           HOPS 
                                         USE Whole Cone / Flower Hops FREE in the Boil  
                                             
                                       1   St  Hop  Charge : To 30.000 Wort Litres @ 1.050 
              14 IBU OLD Goldings @ 4 % a/a = 35 g , 22 IBU Brewer`s Gold @ 6.5 % a/a = 33 g

                                        2  Nd Hop Charge : To 28.200 Wort Litres @ 1.053 
                                                    10 IBU Fuggles @ 5.5 % a/a = 18 g 

                                       3  Rd  Hop Charge : To 28.990 Wort Litres @ 1.051 
                                            12 IBU East Kent Goldings @ 6.5 % a/a = 18 g

RACKING HOPS :
       12 g Hallertau Heresbrucker / Saazer @ 3.5 % a/a TO 24.750 Beer Litres IN Draught Vessel

                                              Pitch with 88 g Weight of a LIVE Yeast @ 15 c
