CANNON BREWERY BEERS IN 1871 - 1872

 How Do All ,

This post is possible thanks to the efforts of the ever helpfull team at Sheffield City Archives , Located on Shoreham Street . A short walk from the Train Station ; On arrival ; I was greetted and asked for my Sheffield Libraries Card ;  after using the storeage lockers handily provided , I was through to the search room and the beery disvoveries that awaited !!! ; 

The first doccument examined was a tattered looking narrow notebook with no front cover 
Catalogue No : SHW 6 / 1 / 1 / 3 .
 Hardly an auspicious start , but as I leafed through the pages reading about a Victorian Brewer`s observations of brewing , malts and general information on analysis & notes on the Arsenic in the Beer crises of 1900 - 01 - 03
 ( Caused by the use of Arsenious Sulfuric Acid at Bostock`s in making Invert Sugars ) ; 
I found brewing records , Merely recorded as ; " From Captain Latham`s Book , Cannon Brewery , 
St John`s St , London " .  These brewings cover selected brewings of SOME beers produced by The Cannon Brewery in 1871 - 1872 ;  I hopoe that you all enjoy the ` Beers ` table ; I`ll be analysing the Porters & Stouts from this record in the next few weeks , with a similar table to follow; Look out for the recipe post on Saturday , It`ll be the 36 / Bitter Ale 🍻

FREDERICK BAILEY & Co : I P A 1888

 How Do All ,

Following the results of a recent poll over on Twitter ; Here`s the recipe for another classic I P A , 
This time from the Star Brewery in Cambridge ,
 Operated at this time by Frederick Bailey who`d purchased the brewery in the late 1850`s . 
 Sadly the Private Brewing Book of H H Tebbutt 1881 - 1889 is the only known surviving brewing production record from a Cambridgeshire brewery in a public archive ; So if you know of any other surviving Brewing  Records from Cambridgeshire Breweries ,Leave a comment below , I`d love to hear from you , I`m happy to credit people for submissions and respect privacy where requested .

                                   1 St Mash Heat : 62 c At         0 - +   90 Minutes = 15.500 Litres

                                  3 Rd Mash Heat : 69 c At  + 150 - + 180 Minutes =  7.570 Litres

The Wort runs CONSISTENTLY Clear & Bright , Then send to the Copper ; Removing any Scum / detritus floating on the Wort surface . 
COLLECTIUON : At Collection , ADD Liquor to 1.054.75 , THEN CONDENSE to 1.055 ,
ON 29.000 Wort Litres in Copper and Start Boil Clock once at the Full Boil .

J & R TENNENT : PORTERS & STOUTS 1830 - 1831

 How Do All ,

It`s taken me a while to get round to looking at the Tennent`s records , but here`s the first table of analysis from the 1830 - 1831 Brewing Book @ T 6 /1/1/1 
   ( 1829 Brewings are , referenced at the start of the 1830 - 1831 book ) 
This brewing book forms part of the Tennent Collection ; Deposited at the internationally important 

Scottish Brewing Archive , held by the helpful team at Glasgow University Archives : 
Special Collections Department .


These Brewing Books contain little or no detail of the production and attenuation process used by Tennent`s in the early 19 Th Century , so I`ve used :  Mashing , Boiling & Yeast Pitch Rates from the period to approximate qualities of the beers brewed ; and have used the same thought & working processes to estimate the Primary and Secondary attenuation ( Fermenting Vessel & Cask ) results .


I hope that the table is of interest ; I`ll be analysing the Ales in the near future ; after I`ve anlalysed those records , Including the " For Dickson " Brewings I`ll be posting the results in a similar table .

UNTIL the Wort is Consistently BRIGHT & CLEAR , Then send to the Copper . 
                            SPARGE : @ Clear Wort to Copper + 10 Minutes AT 74 - 71 - 68 c = 22.750 Litres ; 
At a Gravity of 1.004.5 , STOP TAPS / Close Off Mash Tun Valve and COLLECT WORT in Copper .
COLLECTION : At Collection ; ADD Liquor to 1.040.75 and CONDENSE to a Gravity of 1.041 ;
ON 28.000 Wort Litres in Copper . When Condensing to 1.041 , remove any Scum / Flotsam from the Wort surface , Then once @ 1.041 ON 28.000 Wort Litres , START BOIL CLOCK ( 1.5 Hrs / 90 Mins )

Here`s a delicious  X X X Ale recipe from Thos Russell`s Gt Western Brewery in Wolverhampton , It`s the most frequently brewed beer in the 1879 Brewing Book , One that`s ` Parti Gyled ` with ` BEER ` , with teh Beer making up approximately Av : 8.7 % of the production volume in those brewings .

At 120 Minutes , Slowly open the Mash Tun Valve and return OVER THE MASH , ANY Cloudy /
Turbid 1 St Runnings until the wort is CONSISTENTLY Clear & Bright , ONLY THEN send to the Copper .
              SPARGE : At Clear Wort to the Copper + 10 Minutes @ 82 c = 18.880 Litres 
At a Gravity of 1.005 , STOP TAPS / Close OFF Mash Tun Valve and COLLECT Wort in the Copper ;
 COLLECTION : Add Liquor to 1.047 , THEN CONDENSE to 1.047.25 ON 35.0 Wort Litres .
As the Wort is being Condensed  , remove any scum floating on the Wort Surface BEFORE 1 St Hops .

A 2 Hour Boil ON HOPS ; 1 St Charge @ Let Off - 120 Mins , then at Let Off - 60 , ADD 2 Nd Hops .
At Let Off - 25 Minutes , ADD 3 Rd Hop Charge then at Let Off - 12 Minutes , ADD the Copper Finings then at Let Off ( 120 Minutes ) , STAND 1/2 Hour then COOL A S A P to Pitching Heat .

                                       1 St Hop Charge : 35.000 Wort Litres @ 1.047.25 
                 Goldings @ 6 % a/a , 9 IBU = 17 g , Keyworth Mid Season @ 6.5 % , 9 IBU = 16 g

                                                 2 Year Old Cluster @ 6 % , 8 IBU = 13.5 g

Following on from the last post , here`s an example of the X Mild Ale from the 1879 Brewing Book
   20 Th June to the  29 Th August 1879 @ Wolverhampton City Archives Cat No : DB / 10 / 4 / 1 .

Pale Ale @ 6.5 ebc 50 %                             2.975 Kg 
                            Eg : Crafty Maltsters :                    Pop`s Pale Ale 
                                    Malting Company of Ireland : Irish Ale Malt 
                                     Barrett - Burston : Vic Ale Malt @ 7 ebc 

Pale Ale @ 4.5 ebc 30 %                             1.785 Kg
                             Eg : Simpson`s Best  Pale Ale Malt 
                                     Barrett - Burston : Border Ale @ 4.5 ebc 

Crisp Malt : Chevalier Pale Ale                   0.600 Kg 


                                LIQUOR , MASHING , SPARGING & COLLECTION
Use a Soft / Mild Ale type brewing liquor and Pre Warm the Mash Tun with Liquor @ 90 c - 15 Mins
Before Goods In ( Mashing In ) to 1.5 " ABOVE the Plates / Filter Bed .
                                 1 St  Mash Heat :  62.5 c At         0 - + 105 Minutes = 12.505 Litres 
                                 2 Nd Mash Heat : 65     c At + 105 - + 150 Minutes = 14.590 Litres 
At + 150 Minutes , slowly open the Mash Tun valve and return OVER THE MASH any Cloudy / 
Turbid runnings , UNTIL the Wort runs BRIGHT & CLEAR , THEN allow to the Copper .
At Clear Wort to the Copper + 10 - 15 Minutes , SPARGE @ 82 c = 27.100 Litres ;
At a Gravity of 1.003.5 then STOP TAPS / Close off Mash Tun Valve and COLLECT the Wort 
In the Copper ; ADD LIQUOR to 1.032.75 , then CONDENSE to 1.033 ON 41.000 Wort Litres in Copper and as the Wort is brought to the boil , remove any scum floating on the wort surface during 
the Condensing Boil period / BEFORE the start of the Boil Clock . 

                                                             COPPER 
                                                        A 2 1/2 Hour boil On Hops
1 St Hop Charge @ Let Off - 150 Minutes @ 1.033 ,  Then at Let Off  - 65 Mins at 1.043 
ON 28.575 Wort Litres in Copper , ADD 3.135 Litres of LIQUOR reducing the Gravity to 1.038.75 . 
At Let Off - 60 Mins ADD the 2 Nd Hop Charge then at Let Off - 12 Minutes , ADD Copper Finings  AT LET OFF ( 150 Minutes )  STAND the Copper 1/2 Hour then Cool A S A P .

                                     1  St Hop Charge : To 41.000 Wort Litres @ 1.033 
                                      Hallertau Heresbrucker @ 3.5 % a/a :7 ibu = 24 g

                                     2 Nd Hop Charge : To 31.505 Wort Litres @ 1.039 
                                            East Kent Goldings @ 6.5 % a/a :  8 ibu = 12    g
                                                  Bramling Cross @ 6.5 % a/a :  3 ibu =   4.5 g

                                                              YEAST 
                          Pitch with 90 g Weight of a Live Yeast to 26.050 Wort Litres @ 15.5 c
