Today`s draught of contentment comes from Victorian Burton on Trent .
As with most of my home brew recipies , I`ve designed this version for the types of containers
Available to most home / hobby brewers Viz : Metal / Plastic ;
With the concomitant reduction in Racking Gravity required for such a vessel .

MALTS
Crisp Malt : 70 % Chevalier = 4.900 Kg
30 % Hana Vienna = 2.100 Kg
MASHING
USE A BURTONISED LIQUOR ;
Thoroughly pre warm the mash tun with Liquor @ 90 c,
- 10 Mins BEFORE mashing in
ENSURE the Liquor is 1.5 " ABOVE the plates / filter bed
MASH : 2 Hours @ 64 c = 17.60 Liquor Litres ;
At 120 Minutes , slowly open the Mash Tun Valve
Return any cloudy Wort OVER the mash until ,
CONSISTENTLY Clear & Bright ,
Only then send to the Copper and begin Wort Collection .
SPARGING
At Clear Wort to Copper + 5 - 10 Minutes
77 c = 30.0 Litres Liquor Allowance .
AT 1.006 ,
Stop Taps and Collect Wort as below

ADD 2.290 Liquor Litres = 32.290 Wort Litres @ 1.055.75
ADD 1.003.25 No 1 Invert = + 0.330 Kg = 1.059 IN COPPER
CONDENSE to 31.740 Wort Litres IN COPPER @ 1.060
COPPER & HOPS
A 3 Hour boil ON HOPS
1 St Hop Charge : Let Off - 180 Minutes
@ 1.060 ON 31.740 Wort Litres
21 IBU Brewer`s Gold @ 6.5 % = + 40 g
2 Nd Hop Charge : Let Off - 150 Minutes
@ 1.063 ON 30.150 Wort Litres
23 IBU French Fuggles @ 4.2 % = + 69 g
3 Rd Hop Charge : Let Off - 90 Minutes
@ 1.069 ON 27.245 Wort Litres
13 IBU Goldings @ 6.0 % a/a = + 26 g
4 Th Hop Charge : Let Off - 25 - 30 Minutes
@ 1.075 ON 24.900 Wort Litres
13 IBU Goldings @ 6.0 % a/a = + 24 g
At Let Off - 12 Minutes , ADD Copper Finings
AT Let Off STAND 15 Minutes ,
RECIRCULATE In Copper 15 - 20 Minutes ;
STAND 3/4 Hour ,
COOL A S A P to Pitching Heat
23.655 Wort Litres @ + 60 Minutes AT 1.078.75
YEAST
Pitch with 220 ml of a LIVE YEAST @ 14 c

STAND : 1 Month @ 12 c , VENT EXCESS C O 2 ;
then to Cellar @ 10 c ON ENTRY .
CELLAR : AT 8 - 10 c FOR 6 - 12 Months then , @ 1.026.5 ; allow C V to 13 c
ALLOW at 10 - 12 c for X weeks / months UNTIL @ 1.024.5 ;
ALLOW the C V Heat to 13 - 15 c ,
VENT C V FULLY @ 1.024.25 & Re Seal ,
DEAUGHT : Rack to DRAUGHT vessel @ 1.024.25 - 1.024 @ 14 - 15 c;
STAND : 2 WEEKS @ 12 c , CELLAR : 2 - 3 Months @ 12 c - 10 c ;
ADD FININGS , Then Roll & Stillage .
STILLAGE : 1 WEEK @ 12 c then FULLY VENT and allow 6 - 12 Hours BEFORE Q . C
