WHITBREAD & Co : PALE ALE 1876

How Do All ,

Today`s cerevesian draught of contentment is another beery delight that comes from entries in ,  
The " Unknown Brewery , Brewing Book 1876 - 1877 @ LMA 4453 / D / 02 / 024 ;
 Part of the larger Whitbread archive held by the ` Gradely ` and helpfull team down at 
 The London Metropolitan Archives on Northampton Rd in Clerkenwell .

As I`ve discussed in other blog posts from this source , I`m convinced that this is an ` Independent ` 
 Set of records ; Drawn from the brewings at Chiswell St for the period covered by the book ;
For which Whitbread`s own production records are in two different books , Ale & Porter Brewing .

The original brewing of this beer used 40 Quarters of ` Dereham ` ? Malt , 
Providing a yield to Copper from the Mash Tun of X Wort Barrels at 1.041.5 ;
  With the Wort Length in Copper Extended to 237 Wort Barrels at ` All Up ` / Let Off - 150 Mins,
By the addition of 1.013 of Sugar , which in this case I have presumed is a White Cane type .
With the whole volume carrying a Collected gravity of 1.044.5 at the 1 St Hop Charge 
( 237 Wt Barrels ) ; with the total Hops Charged providing a respectable 76 IBU .

H & G SIMONDS : " STOUT FOR HOPE " 1870

 How Do All ,

Today`s beery delight is from the well known Berkshire brewery of H & G Simonds ;
 Taken from the information included in the Brewing Book 1869 - 1872 that forms part of the 
Simonds archives held as part of the larger Barclay, Perkins & Courage & Co Archives ;
All cared for by the nice folks on Northampton Rd at The London Metropolitan Archives ,
Catalogue No : ACC 2305 / 60 / 79  .

The entry in the brewing book has " Stout for Hope " written in longhand form accross the top
Of the ` Quality ` mark section ; Which I`ve inferred to be a Stout brewed expressly for export
To the Cape of Good Hope colony in what today is South Africa ; 
Happily this Stout brewing record is one of the few I`ve seen so far with racking hops specifically 
Noted in the original brewing record  *
 * Peter Walker & Sons of the Dallam Lane Brewery in Warrington ( Lancashire ) were  ,
Also rather helpfull in recording the Dry / Racking Hop additions in their brewing records .

It`s been a while since I published a recipe of my own design , 
  A friend of the blog was recently kind enough to get in touch regarding potential access to some 
Brewing records in a well established brewer`s archives .

WHITBREAD & Co : XX EXPORT ALE 1876

How Do All , 

Today`s recipe comes from the Unknown Brewery , Brewing Book 1876-7 that forms part of 
The larger Whitbread Archives cared for by the good folks at The London Metropolitan Archives ,
Which I`m certain is a tangental record of Whitbread`s own Ale + Porter sides at Chiswell St 
During the period covered by the book .

The original gist for this beer comprised Smyrna malted at Dereham and other English barleys ,
With the bittering power coming from a judiciously mixed blend of English and American Hops .

  As to the original beer packacking format , I reckon X X Export would have been matured ;
Probably for a minimum of 6 - 8 Months before being bottled and subjected to further maturation,
Before being sent out to the trade in whatever far flung outpost of the empire that Whitbread`s 
Sales Agents had reached .

Prompted by a natter over the phone yesterday with good mate of the blog Glenn Heinzel , 
In which we talked about brewhouse taxonomy of beers , mashing & Wort Collection and ,
The use of sugars and Charge Points ; Gravity and Volume of Hop Additions ;
 I started to look through my recipie formulae notebooks for London breweries for,
A classy premium beer with Letter Symbology as a ` Brewhouse Taxonomy ` of the beer brewed .

 The resulting product is this superb recipe for Whitbread`s X L;
From the source outlined in previous posts , part of the Whitbread Collection ;

                                                                   MASHING 
                                                           Use a Pale Ale Liquor
                     Pre Heat the mash tun with Liquor @ 95 c - 10 Mins BEFORE Mashing In  
                                         LIQUOR 1.5 " ABOVE the Plates / Filter Bed 
                                  1 St Mash Haet : 65 c @ 0 - + 40 Mins = 13.420 Litres
                              2 Nd Mash Heat : 68 c @      + 40 - + 160 Mins = 3.400 Litres 
                                                               At 160 Minutes , 
                    Slowly open the mash tun valve and return any turbid / cloudy 1 St Runnings
                           OVER THE MASH , UNTIL CONSISTENTLY CLEAR & BRIGHT ,
                                    Only then send to the Copper and begin Collection of Wort .

                                                                  SPARGING 
                                       Sparge at Clear Wort to the Copper + 5 - 10 Mins 
                                              @ 82 c = 32.450 Litres ALLOWANCE 
                           At a Gravity of 1.005 , STOP TAPS and Collect Wort IN COPPER

                                                         COLLECTION 
                           After stopping taps @ 1.005 , ADD Liquor to the Copper ,
                                    Reducing the Copper Gravity to 1.048.75 
                                        ON 31.160 Wort Litres IN COPPER 
                                               AT LET OFF - X Minutes  
                             Then CONDENSE to 1.049 on 30.000 Wort Litres
                                            IN COPPER @ L/Off - 150 Mins
                         Remove any Scum / Detritus floating on the Wort Surface 
                                                  BEFORE L/Off - 150 Mins .

                                                         A 2 1/.2 Hour boil ON HOPS 
                                             1 St Hop Charge : @ Let Off - 150 Minutes 
                                            2 Nd Hop Charge : @ Let Off -  60  Minutes 
                          At Let Off - 35 Minutes @ 1.062 ON 23.240 Wort Litres IN Copper 
                                        ADD 1.002.75 Degrees of Malt Extract = 0.210 Kg 
                                           3 Rd Hop Charge : @ Let Off - 30 - 25 Minutes   
                          At Let Off - 12 Minutes , ADD the Copper Finings and at Let Off ,
                                                               STAND 1/4 Hour 
                   Then Recirculate Wort IN COPPER 15 Minutes BEFORE A 1/2 Hour STAND 
                                             THEN COOL A S A P TO PITCHING HEAT 

                                                                          HOPS 
                                1 St Hop Charge : To 31.000 Wort Litres IN Copper @ 1.049
                                             13 IBU Brewer`s Gold @ 6.5 % a/a = 22 g 

                               2 Nd Hop Charge : To 24.040 Wort Litres IN Copper @ 1.060 
                                                  20 IBU Cluster @ 6.5 % a/a = 26 g 
                   ** Aussie based readers might like to replace this Hop with Australian Cluster .

                               3 Rd Hop Charge : To 21.835 Wort Litres IN Copper @ 1.066
                                                     13 IBU Perle @ 7.75 % a/a = 16 g

                                                                 YEAST
                                              Pitch with 150 ml of a LIVE YEAST @ 16 c
