C F TETLEY : PALE ALE 1872

 How Do All , 

Here`s a Pale Ale from the Brewing Journal of Charles Francis Tetley 1870 - 1872 , deposited with the ever helpfull team at West Yorkshire Archives in Morley as part of the Joshua Tetley & Sons Archives , Catalogue No : ACC 1890 / Box 54 .
The book covers brewings of :both Pale and X Ale , Porter , Stout and X X ; X X & X X X Stock Ales .

The range of beers as entered in this source don`t tally with the corresponding Tetley beers of the same period ; References to the use of London brewer`s yeasts such as Barclay - Perkins as well as the disparity between the original and attenuation gravities of the beers in question , lead me to the conclusion that this Brewing Journal is a ` Pupil Brewer`s ` as opposed to a statutory record of production and NOT a record of brewing at Leeds .

                                         MASHING , SPARGING & COLLECTION 
Use a Pale Ale liquor and thoroughly Pre Warm the mash tun to 90 c - 10 Mins BEFORE goods in ;
                        ENSURING that the LIQUOR is 1.5 " ABOVE the plates / filter bed 
                                 1 St Mash Heat : 65 c         0  - +   30 Mins = 12.525 Litres 
                                2 Nd Mash Heat : 66 c +   30 - + 150 Mins =   3.150 Litres 
                                3 Rd Mash Heat : 67 c + 150 - + 180 Mins =  11.250 Litres
At Taps , slowly open the mash tun valve and return any Cloudy / Turbid 1 St runnings OVER the mash until CONSISTENTLY CLEAR & BRIGHT , only then allow to the Copper .
SPARGING : At Clear Wort to the Copper + 10 - 15 Mins @ 72 c = 24.470 Litres ; At a gravity of 1.005 , STOP TAPS and COLLECT WORT in the Copper .

 At Ciollection , ADD Liquor to the Copper , reducing the gravity to 1.043.75 , then CONDENSE 
to a gravity of 1.044 ON 30.000 Wort Litres in Copper .
N B : Take care to remove any detritus or scum floating on the Wort surface BEFORE starting the Boil Clock @ Let Off - 105 Minutes .

How Do All ,

Today`s recipe is a Pale Ale brewed without the use of  Sugars , It`s  from the Cambridge brewery of Frederick Bailey on Newmarket Rd .

Taken from records in the Private Brewing Book of H H Tebbutt 1881 - 1889 , held by the helpfull team at Cambridgeshire Archives as an Un Catalogued Accession . 

I`m also gratefull to the team at Greene King Ltd for sponsoring the research costs involved in my analysis of the beers of Frederick Bailey as brewed at The Star Brewery .

Here`s today`s offering , a tasty low ABV  ` Ordinary `  Mild Ale , from the noted Warrington brewery of  Peter Walker & Sons on Dallam Lane ( Walker`s 3 Rd brewery in the town !!! )  . 
It`s taken from one of the 1940 Brewing Books deposited with the helpful team at Liverpool Central Library and Archives on William Brown St , just down the street from the World renowned 
Walker Art Gallery ; established by the largesse of  Sir Andrew Barclay Walker .

MORSE & WOODS : MILD ALE 1844

How Do All ,

Today`s post is taken from the excellent history of the Morse family brewing business by the very Knowledgeable Rev`d Eric Dore ,  " De Coding The Morses " Pub : Southwold Press Ltd 2015 .

The beer is , as per it`s entry in the brewing book a ` Mild Ale ` ; A beer that would be aged for a short period before being sent out to the trade and private family consumption in Oak barrels of varying size .

The known surviving brewing books from the Lowestoft brewery : 1844 - 1852 , 1858 - 1859 and ,
1871 - 1872 are deposited with the team at Suffolk Archives at The Hold on Fore St in Ipswich ;

Today`s cerevesian treat of a X X X Ale comes from The Private Brewing Book of H H Tebbutt , 
Part of an uncatalogued accession from Fred`k Bailey`s Star Brewery covering the 1870`s as financial and trading records , with the brewing book being the only specific brewing record from that concern ,

At 200 Minutes , Slowly open the Mash Tun valve and return any turbid / cloudy 1 St runnings OVER the Mash until CONSISTENTLY CLEAR & BRIGHT , Only then allow to the Copper .
SPARGING : At Clear Wort to Copper + 10 - 15 Minutes , SPARGE @ 76 c = 19.450 Litres ,
At a Gravity of 1.005.5 - 1.005 , STOP TAPS and Collect WORT in Copper .

COLLECTION : At Collection , ADD Liquor to the Copper , reducing the Gravity to 1.050.25 , 
                              THEN CONDENSE TO 1.050.5 ON 29.000 Wort Litres IN COPPER .

                                           1.012.25  No 2 Invert @ 18.02%  = 1.095 Kg 

                                                                      COPPER 
       A 2 1/4 Hour boil ON HOPS ; 1 St Hop Charge @ Let Off - 135 , then at Let Off - 90 Mins ,
         ADD the 2 Nd Hop Charge and then at Let Off - 60 Minutes , ADD the 3 Rd Hop Charge .
            AT LET OFF - 40 Minutes ON 24.110 Wort Litres in Copper @ 1.060 , ADD 4.400 Litres of 
LIQUOR , Reducing the Gravity to 1.050.75 ON 28.510 Wort Litres THEN ADD SUGARS .
            At Let Off - 12 Minutes , ADD the Copper Finings then at Let Off , STAND 1/2 Hour 
                                               THEN COOL A S A P to Pitching Heat .

                                   1   St Hop Charge : To 29.000 Wort Litres @ 1.050.5
                     5 IBU OLD Goldings @ 4 % a/a = 12 g , 5 IBU Fuggles @ 5.5 % a/a = 9 g 

                                   2 Nd Hop Charge : To 26.415 Wort Litres @ 1.055 
                                                 10 IBU Fuggles @ 5.5 % a/a = 17 g

                                   3 Rd Hop Charge : To 24.970 Wort Litres @ 1.058 
                   5 IBU Brewer`s Gold @ 6.5 % a/a = 7 g , 5 IBU EK Goldings @ 6.5 % a/a = 7 g

Here`s a superb historic XXX Porter from the Haddington Brewery of Mark Binnie & Co .
This beer is my interpretation of the recipe contained in  the Brewing Notebook of John Binnie 1903 - 1906 @ BH 6/1/1/1 , Part of the Scottish Brewing Archive , deposited with the ever helpfull team at Glasgow University Archives & Special Collections

                   This recipe for 30.000 Wort Litres to Copper @ 1.064 , 75 % Mash Efficiency 

                                                                           MALTS           
Crafty Maltsters :
                             58       %   Scottish Annat                            = 4.870 Kg 
                             24.25  %   Pop`s Pale Ale Malt @ 6.5 ebc  = 2.050 Kg 
French & Jupps :
                               6       %   Amber Malt                                = 0.570 Kg
                               6       %   Brown Malt                                = 0.570 Kg 
                               5.75  %   Black Malt                                  = 0.545 Kg 

                                            MASHING , SPARGING  &  COLLECTION 
    Use a Stout Liquor and thoroughly Pre Warm the mash tun  to 90 c - 10 Minutes before mashing in ,
                                            Ensuring the Liquor is 1.5 " ABOVE the Plates .
                                  1   St Mash Heat : 64 c @        0 - + 120 Mins = 23.110 Litres 
                                 2 Nd  Mash Heat : 67 c @ + 120 - + 150 Mins = 11.320 Litres
                                 3 Rd  Mash Heat : 70 c @ + 150 - + 180 Mins =   7.460 Litres                     
   At + 120 Minutes , slowly open the Mash Tun valve and return any turbid / cloudy 1 St runnings        
                        OVER the mash UNTIL Bright & Clear , ONLY THEN send to the Copper 
SPARGE : At Clear Wort to Copper + 10 Minutes = 30.000 Litres @ 72 c UNTIL 1.007 , 
                                         Then STOP TAPS and Collect Wort in the Copper.
COLLECTION : At Collection , ADD Liquor to the Copper , reducing the Gravity to 1.063.75 ,
                         THEN CONDENSE TO 1.064 ON 30.000 Wort Litres in Copper .

                                                                        COPPER  
                 A 2 Hour boil ON HOPS , 1 St Charge to the Copper at Let Off - 120 Minutes;
Then at Let Off - 30 Mins, ADD the 2 Nd Hop Charge . At Let Off - 12 Minutes , ADD the Copper Finings then at Let Off , STAND the Copper 1/2 Hour BEFORE Cooling A S A P to Pitching Heat .

                                                5 IBU  OLD Goldings              @ 4    % a/a = 14 g

                                11 IBU  Saazer / Hallertau Heresbrucker @ 3.5 % a/a = 34 g

                                         Pitch with 100 g Weight of a L;IVE Yeast @ 16 c 
                                                      To 25.210 Wort Litres @ 1.075

                  FULLY VENT @ 1.018 then allow to 15 c .

BOTTLING : At 1.017.75 , BOTTLE CLEAR & BRIGHT @ 15 c , THEN STAND 1 week .
                        CELLAR BOTTLES @ 10 c FOR 2 Months .
STAND :        2 Weeks @ 12 c THEN Q . C
