ROBERT WHITSON & Co : 60 /- EXPORT BEER 1850`s

 How Do All , 

Here`s  a ` Lost Edinburgh / Leith brewery`s 60 /- Export Beer .
It`s a nice and simple brew as brewed by Robert Whitson & Co and ;
 Is taken from the brewings included at the rear of , The West Brewery , Elgin ,
 Brewing Book 1847 Cat Ref : EWB .

This is one of the few commercial brewing production records in the internationally important 
Scottish Brewing Archive that are from outside the pale of major population centres ,
 such as Edinburgh & Glasgow & other areas heavily associatedwith the Brewing trade,
 Such as Alloa in Clackmannanshire .

As with other records in the Scottish Brewing Archive , this source is looked after by the nice 
And helpfull team at The University of Glasgow : Special Collections & Archives on Thurso St .

As to the recipe , the grist and mash are relatively simple , as to the Hops ,
I`ve formulated the Hop Grist  and I B U distributuion to reflect what , I believe would,
Have been an even bitterness provided by the seperate charges of Hops in the original brewing 
 @ x Gravity at X Point during the boil .

                                    UNIVERSAL ADJUNCTS TO MASH 
                                     18.0 % FLAKED MAIZE = 0.635 Kg 
                                         +++ 0.360 Kg OAT HULLS +++

                                                           MASHING 
                                              Use an EDINBURGH Type Liquor 
             Thoroughly pre warm the mash tun with Liquor @ 90 c - 10 Mins before Mashing In ;
                                   Ensure the Liquor is 1.5 " ABOVE the Plates / Filter Bed 
                                 1 St Mash Heat : 63 c     @ 0 - + 30 Minutes = 10.650 Litres
                             2 Nd Mash Heat : 66.5 c  @ + 30 - + 120 Minutes = 3.235 Litres
                                       AT 120 Minutes , Slowly open the mash tun valve ;
                          Return any Cloudy Wort Over the mash until Clear & Bright , 
               ONLY THEN SEND TO THE COPPER  AND BEGIN WORT COLLECTION

                                                                   SPARGING
                             At Clear Wort to the Copper + 5 - 10 Minutes AT 76 - 73 - 70 c  
                                                  = 20.000 Litres Liquor Allowance .
                                      At 1.004.25 , STOP TAPS and Collect Wort as below .

                                                6 IBU Goldings            @ 6.0 % a/a = 9.0 g

                                  AT LET OFF - 70 Minutes ON 19.625 Wort Litres @ 1.050 , 
                             ADD 6.370 Litres of LIQUOR = 25.995 Wort Litres @ 1.037.75 ,
                                             THEN ADD THE No 1 INVERT @ + 1.004.5 
                                      Yielding 25.995 Wort Litres IN COPPER @ 1.042.25 

                                                 2 Nd Hop Charge @ Let Off - 60 Mins 
                                              To 25.530 Wort Litres IN Copper @ 1.043
                                                   10 IBU  Fuggles @ 5.5 % a/a  =  16 g 

                                              3 Rd Hop Charge @ Let Off - 25 Minutes 
                                          TO 23.450 Wort Litres IN COPPER @ 1.046.5
                                                        6 IBU Goldings @ 6 % = 10 g

                                          AT LET OFF - 12 Minutes , add Copper Finings ;
                                               STAND COPPER 15 Minutes @ Let Off 
                                     THEN , Recirculate Wort IN COPPER 15 - 20 Minutes ;
                              STAND 3/4 - 1/2 Hour THEN COOL A S A P to Pitching Heat
