H BENTLEY & CO YORKSHIRE BREWERIES Ltd : RUNNING MILDS 1892 - 1894

 How Do All ,

As some readers will know , I`ve just completed my analysis of the beers of Henry Bentley & Co Yorkshire Breweries Ltd 1892 - 1894 from the sole surviving brewing book in a public archive 
NB : There is an 1896-7 Cost Price Brewing Book in the same collection that`s more of a Gross Wt used and cumulative costs book than it`s earlier dated cousin,
The Brewing Book 1892 - 1894 @ Cat No WYL 2045/288/106 is part of the Bentley`s Yorkshire Breweries collection ; Cared for by the ever friendly & helpfull team at West Yorkshire Archives at Morley Nr Leeds .
   This post features my commentary and analysis on  the running mild ales of the Eshaldwell Brewery during the period covered by the 1892 - 1894 book , with the other beers following in later posts .

 My interpretation and  analysis of these records took me a few months and hundreds of individual calculations to balance both the stated Wort volume & Gravity to Copper @ Let Off - X Minutes at the Start of the boil and the Gravity and  Wort Barrels @ Cast to Square / F V  ; 
The project also called for a reasonable ` Guestimate ` of the alpha acids of the hops used , And more importantly their position in the boil / Charge Point & Time @ X Gravity and Wort Volume .
 Sdaly the ammount of Liquor used in the Mashing process isn`t recorded in the 1892-4 book , so these are my own interpretation of area & period best practice .

This Beer , merely written in the book as a ` Cursive ` x is the weakest of the HB & Co beers ; Also the most frequently brewed between December 1892 and March 1894 @ 106 brewings ! .
 This would have been a running Mild Ale designed to be drunk within a few weeks of it`s production .
A typical Tun grist of 80 - 85 % Yorkshire or another English malt , with the remaining portion taken up by the use of " Smyrna " , another feature of this brew is the use in common with other products Ex Eshaldwell of a cooled and clear Black / Patent malt broth at X Point in the brew for colour and taste profile correction ; Also present in most x Ale brews was a small admixture of Caramel .

   The X Ale of Eshaldwell as opposed to it`s more frequently brewed cousin employed Racking Hops, And as per the x Ale was designed to be brewed and consumed within a short period of time , anything up to 3 Weeks from it`s brew date .
 The Malts employed were, as with other H B & Co beers employed Yorkshire , Yorkshire Amber and Suffolk malts @ 80 - 85 % with the remaining % taken up by the now ubiquitous " Smyrna " malt .

THE BEERS OF TENNANT BROS IN 1891

 How Do All , 

I`ve deleted the previous posts on the 1891 Tennant Bros beers as I wasn`t entirely happy with the results of my previous analysis ; This is primarily due to an increased breadth of knowledge re Sugars use in the brewhouse , derived from my research into the beers of a near neighbour of the Tennant Brothers at Woodlesford Nr Leeds ; Henry Bentley & Co Yorkshire Breweries Ltd 1892-4. 
( See tomorrow`s post on the Mild Ales of this firm ) 

The source material for today`s post is , The Brewing Book of E F Goddard 1891 @ MD 75182316 ,
Cared for by the ever helpfull and friendly team at Sheffield City Archives on Shoreham St .

The book contains brewing details such as the Gross Weight of materials used ; Malts , Sugars , Hops ; Original Gravities and occasionally the Wort Collected IN COPPER , and the length cast to the FV .
Sadly absent are the finite attenuation details , so these are my own interpretation based on period and regional practice .
  Conversion and interpretation of the records involved a lot of  complicated maths ,Calculation of the barrels collected @ Copper Up  ; Malt Extract per Quarter calculations which then allowed me to interpret the Sugars use and weight / Degreees to Copper ammount . 
All of the foregoing allowed me to determine the starting point of the boil ( Gravity ) and the average Wort Volume collected and balance the Sugars Used with the ( Where Given ) Final Wort Volume ;
The result of theis permitted me to calculate the IBU of the beers at each relative Hop Charge Point ,with a drop in alpha acid of the Hops used ( Relative to Period ) being an integral part of the process of analysis and interpretaion .

Due to the Malt used ( Branston Y/ String ) and relative bitterness & racking hop rate of this beer ,
 I`d tentatively suggest It`s an IPA in terms of beer type .

The " S " Beer could , due to it`s frequency of brewing ; And the final packaging format indications in the brewing book , be another Strong Ale as it also contains a relatively large Racking Hop Charge @ 4.75 Oz Per Barrel * 1891 .

KIRBY, WRIGHT & CO : 4 d ALE 1865

 How Do All , 

Here`s an infrequent brew from the earliest known commercial brewing record in a Public Archive from a Sheffield Brewery; The Brewing Book of Kirby,Wright & Co @ SHW 6/1/2/1 ; deposited with the helpful and friendly team at Sheffield City Archives on Shoreham St .

The brewing book of Kirby , Wright and Co does contain various details such as Malts & Hops used and Gravities , sadly it  doesn`t record brewlengths and only rarely does it record the initial liquor heat. 
a similar situation exists with the attenuation and yeast use records , though these are , sadly absent .
The records at the end of the book are from the time immediately before Septimus Ward`s purchase of the brewery outright in 1871 ; Happily these records do include ( occasionally ) some mashing and other details which have allowed me to extrapolate the brewlength yields and collection gravities used in the Kirby , Wright & Co beers .
  The Sheaf Island Brewery was established in 1837 by William Roper & John Kirby , with             George Wright joining the business in 1861 in turn they were joined by Septimus Ward in 1868  
who bought the business in 1871 . In 1876 , the entire concern removed  to the Soho Brewery
 of Bradley & Co , shortly after it`s purchase in 1876,  which was then promptly  re named 
" The Sheaf Brewery " , continuing to brew until 1999  when it regrettably ceased brewing  .

Sparge at Clear Wort to the Copper @ 74 - 71 c = 13.0 Litres and at a gravity of 1.005 , STOP TAPS & Collect Wort in the Copper , ADD LIQUOR to 1.049.75 ;  THEN CONDENSE TO 1.050 ON 30,000 Wort Litres in Copper @ Let Off - 120 Mins .

NB : Take care to remove any scum or other detritus floating on the Wort Surface BEFORE adding the 1 St Hop Charge @ Let Off - 120 Minutes AT 1.050 .

Some keen blog readers may have seen my appeals for assistance in accessing Old Brewing Records in previous blog posts ; Well thanks to the efforts of  Hai Pham over in Western Australia , I`m able to bring you this recipe . The EMU Brewing records are cared for by the team at The State Library of Western Australia in Perth , Cat No : MN 747 ACC 2834A/5 = 26.05.1913 - 16.02.1916

SPARGING : Sparge at Clear Wort to the Copper + 10 Minutes AT 74 - 71 C = 11.950 Litres ; At a gravity of 1.003 , STOP TAPS and Collect Wort in the Copper .

Pre Warm the Mash Tun to 90 c - 10 Minutes BEFORE Mashing In ; 1.5 " above the Plates / Filter Bed
                                  1    St  Mash Heat :  63 c At 0 -  +  20  Mins = 11.050 Litres 
                                  2   Nd Mash Heat :  67 c At + 20 - + 120 Mins = 7.100 Litres 
At 120 Minutes , Clear Wort by return OVER the Mash UNTIL CLEAR & BRIGHT , only then allow to the Copper.

                                                        SPARGING   &   COLLECTION
Sparge at Clear Wort to the Copper + 10 Minutes at 74 - 70 c = 18.500 Litres and at a gravity of 1.004,
STOP TAPS and Collect Wort in the Copper , ADD Liquor to the Copper , Reducing the Copper Gravity to 1.035.25 ON 28.000 Wort Litres in the Copper .
At Collection , ADD 1.005.75 No1 Invert and CIONDENSE to 1.042 ON 27.315 Wort Litres in Copper.
NB : As the Wort is condensing , take care to remove any scum / detritus from the Wort surface BEFORE Let Off - 120 Minutes .

                                   1   St  Sugar Charge : 11.51 % @ 1.005.75 =  0.505 Kg

                                   2   Nd Sugar Charge :   9.51 % @ 1.004.75 = 0.440 Kg 

                                                                         COPPER 
                                                           A 2 Hor Boil ON HOPS 
At Let Off - 120 Minutes ON 27.315 Wort Litres In the Copper , ADD the 1 St Hop Charge and at Let Off - 90 Minutes ADD the 2 Nd Hop Charge . At Let Off - 60 Minutes ON 23.260 Wort Litres IN Copper , ADD 6.155 Litres of Liquor , Reducing the Copper Gravity to 1.038.75 on 29.416 Wt /Litres 
THEN ADD the 2 Nd Sugar Charge and at Let Off - 55 Minutes , ADD the 3 Rd Hop Charge .
         At Let Off - 12 Minutes , ADD the Copper Finings and at Let Off , STAND 10 Minutes ,
Recirculate for 5 - 10 Minutes then STAND for 1/2 Hour before COOLING A S A P to Pitching Heat .

JOSHUA TETLEY & SONS Ltd : LIGHT BITTER 1935

 How Do All , 

Yesterday I had a reserach trip to look at some of the Tetley`s brewing records for a long term research project I`m working on ; At the same time , I thought that a few records from the 1930`s would yield some great beer recipies accordingly ; Here`s a nice and tasty Light Bitter Beer from Tetley`s for you all to enjoy .

This beer recipe is taken from information in the the 1935 - 1936 Brewing Book @ WYL 756 / 551 part the Tetley`s Archive , cared for by the ggod folks at West Yorkshire Archives in Morley ; Thanks for your assistance with my Yorkshire beer history research guys , It`s greatly appreciated .

Warminster Malt :                    17.5    %   Plumage Archer = 0.580 Kg
Simpson`s Malt :                      27      %   Best Pale Ale      = 0.885 Kg
Crafty Maltsters :                     17.3    %  Scottish Annat     = 0.565 Kg
                                                 25       %  Pop`s Pale Ale     = 0.825 Kg 

ALT : Malting Company of Ireland 
                                                 25       %  Irish Ale Malt      = 0.825 Kg

FLAKED MAIZE                    13.2    %                              = 0.425 Kg 

                                                                      MASHING
                                                        USE A PALE ALE LIQUOR 
                    Thoroughly Pre Warm the Mash Tun to 95 c - 10 Mins BEFORE Mashing In 
                 Ensure the Liquor is 1.5 " ABOVE the Plates / Filter Bed - 10 BEFORE Goods In 
                                  1  St Mash Heat : 65 c At 0 - + 45 Minutes = 8.820 Litres 
                           2 Nd Mash Heat : 66.5 c At + 45 - + 105 Minutes = 1.600 Litres 
At 105 Minutes , Slowly open the mash tun valve and return any Cloudy / Turbid 1 St Runnings OVER the Mash until CONSISTENTLY Clear & Bright ; ONLY THEN ALLOW TO THE Copper .
SPARGING : Sparge @ 74 - 72 c At Clear Wort to the Copper + 10 Minutes = 19.120 Litres ; 
At a Gravity of 1.003, STOP TAPS and Collect Wort in the Copper .

                                                                 COLLECTION
At Collection of Wort in the Copper , ADD Liquor to the Copper , REDUCING the Copper Gravity to 1.028.25 , THEN CONDENSE to 1.028.5 ON 28.000 Wort Litres In Copper @ Let Off - 120 Mins.

NB : Take Care to remove any Scum / Detritus floating on the Wort Surface BEFORE the 1 St Hops are added at Let Off - 120 Minutes AT 1.028.5 ON 28.000 Wort Litres .

                                                                           SUGARS
                                     1.004.25  White CANE Sugar @ 12.88 % = 0.350 Kg ( R + 3 g )   

                                                                           COPPER
A 2 Hour boil ON HOPS , 1 St Charge @ Let Off - 120 Mins , then at Let Off - 90 M , ADD 2 Nd Hops.
At Let Off - 40 Minutes ON 19.955 Wort Litres IN COPPER @ 1.038 , ADD 11.315 Litres of Liquor ,
REDUCING the Copper Gravity to 1.024.25 ON 31.310 Wort Litres IN COPPER ; Then ADD the SUGAR charge and at Let Off - 35 Minutes , ADD the 3 Rd Hop Charge . 
At Let Off - 5 Minutes , ADD 3.3 ml CARAMEL to the Copper and at Let Off , STAND 10 Minutes ;
Recirculate IN COPPER for 5 - 10 Minutes THEN STAND 1/2 Hour ;
                                                  BEFORE COOLING  to Pitching Heat A S A P .

                                                                            HOPS
                                 1 St Hop Charge : To 28.000 Wort Litres IN COPPER @ 1.028.5 
                                                     9 IBU Goldings @ 6  % a/a = 12 g  

                                       2 Nd Hop Charge : To 24.560 Litres IN COPPER  @ 1.032 
                                                         6 IBU Fugglles @ 5.5 % a/.a = 8 g 

                                 3 Rd Hop Charge : To 30.210 Wort Litres IN COPPER @ 1.029.5 
                                                         5 IBU Brewer`s Gold @ 6.5 % a/a = 7 g

                                                                  RACKING HOPS 
BOTTLING : 4.5 g Fuggles     TO 13 Beer Litres 
DRAUGHT  : 3    g Fuggles     TO 12.800 Beer Litres
