Here`s another superb Scottish Strong Ale recipe for you all to try out .................................................          After a couple of years maturation !!! 

This recipe comes from the personal brewing book of  Wm J Clark , which has entries from the following years :  1881 , 1882 & 1883 . This individual record is , One of many in the Internationally important       Scottish Brewing Archive; held by the good folks at Glasgow University Special Collections & Archives .

           Use a Pale Ale type Liquor , and Thoroughly Pre Warm the Mash Tun to 90 c - 10 Mins

                   1  St Mash Heat : 65 c AT       0 - +   60 Minutes =  32.215 Litres
                   2 Nd Mash Heat : 68 c AT + 60 - + 120 Minutes =  34.485 Litres  
At TAPS ( 120 Mins ) , SLOWLY open the Mash Tun Valve and RETURN OVER any Cloudy 
Or Turbid 1 St Runnings UNTIL the Wort is CONSISTENTLY CLEAR & BRIGHT ,
                                      ONLY THEN SEND THE WORT TO THE COPPER 
SPARGE : At Clear Wort to the Copper + 10 Minutes = 14 Litres @ 75 - 72 c ; At a Gravity of,
1.013 , STOP TAPS and COLLECT WORT in the Copper .
COLLECTION : At Collection , ADD Liquor as require ; REDUCING the Gravity to 1.102.75 
                       THEN CONDENSE TO 29.500 Wort Litres IN COPPER @ 1.103 .
              Take Care to remove ANY SCUM / DETRITUS floating on the Wort Surface ;
              BEFORE STARTING THE BOIL CLOCK ON THE ADDITION OF 1 St HOPS

FREDERICK BAILEY & Co : STRONG ALE 1889

How Do All , 

Continuing the current series of Strong Ales , Here`s a tasty one from the Star Brewery in Cambridge;    This historic Cambridge beer recipe comes from The Private Brewing Book of H H Tebbutt 1881 - 1889 , Which forms part of a small Unaccessioned collection from the Star Brewery 1870`s - 1889 , cared for by the good folks at Cambridgeshire Archives ; This recipe is also made possible by the generosity of the team at Greene King Ltd in Bury St Edmunds who kindly sponsored the reprographics costs ; Cheers guys .

Crisp Malt :                      Chevalier                        @ 62.75   % = 5.435 Kg  
                                         Hana Vienna                    @ 10       % = 0.870 Kg 
 
Simpson`s Malt :             Best Pale Ale @ 4.5 ebc   @ 10       % = 0.865 Kg
                                         Imperial Malt                    @ 12.25 % = 1.210 Kg 

                                            MASHING , SPARGING & COLLECTION
          Use a Pale Ale brewing Liquor , And THOROUGHLY Pre Warm the Mash Tun to 90 c ,
   - 10 Minutes BEFORE mashing in as below , ENSURING the Liquor is 1.5 " ABOVE the Plates .
                                  1  St Mash Heat : 64 c @         0 - + 135 Minutes = 20.950 Litres 
                                  2 Nd Mash Heat : 66 c @ + 135 - + 170 Minutes =    6.110 Litres  
At 170 Minutes , SLOWLY open the Mash Tun valve and return OVER THE MASH any Cloudy or , 
Turbid 1 St Runnings UNTIL the Wort is CONSISTENTLY BRIGHT & CLEAR , 
                            ONLY THEN SHOULD THE WORT BE SENT TO THE COPPER .
SPARGING : At Clear Wort to Copper + 10 Minutes @ 79 - 76 c = 35.000 Litres UNTIL 1.007 ,
Then STOP TAPS and Collect Wort in the Copper .

COLLECTION : At Collection , ADD Liquor to the Copper , REDUCING the Gravity to 1.066.25 ;
THEN CONDENSE TO 1.066.5 ON 29.500 Wort Litres IN COPPER .
As the Wort is being condensed , REMOVE any Scum / Detritus floating on the Wort Surface  .

MARK BINNIE & Co : 140 / - ALE 1904

 How Do All , 

Here`s a Scottish Strong Ale recipe for you all to try from the brewery of Mark Binnie & Co .          Mark Binnie learned his trade at the Edinburgh brewery of Morison & Thomson , before moving to County Durham where he was employed by C F & M Forster , returning to Edinburgh in 1881 when he began building the Nungate Brewery ( Brewing by 1882 ).                                                                          
The brewery continued under the ownership of Mark Binnie until his decease in 1924 , when the business was inherited by William Binnie , continuing until 1937 when it was bought by it`s larger local rivals , William Younger & Co .

BENTLEY`S YORKSHIRE BREWERIES Ltd : A . i 1893

 How Do All , 

Prompted by a recent e mail i received asking about a recipe for ` Gale`s Prize Old Ale ` ;             Here`s another ` Oddball` historic beer for you all to try out ; This time from the Eshaldwell Brewery . Established by Henry , son of Timothy Bentley ( Inventor of the Yorkshire Square system of fermentation in 1794 - 5 &  founder of the Lockwood Brewery in Huddersfield  .

Timothy , who`d been malting in the area since 1808 must have seen the virtues of using the ` Eshald Well ` waters for brewing , As by 1828 Henry Bentley had built a brewery on the burgeoning site .

This recipe comes from the 1892 - 1894 Brewing Book @ WYL 2045 / 288 / 106 Deposited with the good folks at West Yorkshire Archives in Morley ; As a singular entry in the book , I would suspect that it`s the famous " College Ale " mentioned by Alfred Barnard who`d visited the Eshaldwell Brewery a few years earlier in the 1880`s .

I`ve got a SMALL  favout to ask ;For over 7 Years I`ve been searching for ANY other brewing records from breweries established or operated by Timothy Bentley and his Sons in Yorkshire and Lancashire  that aren`t in public archives ;

                                   1 St Mash Heat :       0   +   30 : 66 c = 15.785 Litres 
                                  2 Nd Mash Heat : + 30 - + 120 : 69 c = 10.360 Litres   
At 120 Minutes , Slowly open the Mash Tun valve and return any Turbid 1 St Runnings OVER the Mash until the Wort runs CONSISTENTLY BRIGHT & CLEAR , ONLY THEN allow to Copper .
SPARGE : At Clear Wort To COPPER + 10 Minutes @ 74 c = 26.150 Litres , and at a Gravity of 1.005,
STOP TAPS and COLLECT WORT in the Copper .

COLLECTION : At Collection , ADD Liquor to the Copper , REDUCING the Gravity to 1.048.75 ,
THEN Condense to 1.049 ON 29,500 Wort Litres ; As the WORT is being condensed , Take care to remove any Scum or other detritus floating on the Wort surface .
AS THE GRAVITY REACHES 1.049 , ENSURE 29.500 Wort Litres in Copper @ 1.049 , 
THEN ADD THE INVERT SUGAR and FURTHER CONDENSE to 1.075 ON 29.300 Wort Litres .

J & R TENNENT : ALES 1830 - 1831

How Do All , 

Here`s the results of my analysis of the Ales of J & R Tennent`s Wellpark Brewery , Glasgow .

This analysis follows on from the one of the Porters & Stouts contained in the Brewing Bk 1830 - 1831   @ T 6 / 1 / 1 /1  deposited at The Scottish Brewing Archive ; Held by the team @ Glasgow University Archives & Special Collections Department

THE BEERS OF J & R TENNENT , GLASGOW ,1830 - 1831, Part 1 : PORTERS & STOUTS

  How Do All , 

Here`s the resulsts of a research project ; I`ve been labouring away at it since my last visit to the 
Scottish Brewing Archive at The University of Glasgow Special Collections & Archives on Thurso St 
In February this year . As is often the case  , Other projects kept popping up but after clearing the decks a little bit (A rough edit of my 1 St Book of historical beer recipies) I was able to really get into it !! . 

The Tennent Brothers brewing records for this period don`t have any Mashing or Sparging ;
Coppering Times ( Length of Boil ) or other details such as Attenuation and Pitching Rates of Yeasts ;
So in the interpretation and conversion of  the raw data contained in the 1830 - 1831 Brewing Book 
@ T 6 / 1/ 1/ 1 , I`ve used period practice and extrapolated data from other Scottish brewer`s records from the same time period . 
I`m endebtted to a fellow member of The Scottish Brewing Archive Association who kindly provided the illustration of the brewery in the 1850`s to give a general idea of the scope of activity at Wellpark in the early to mid 19 Th century .
