How Do All ,
Today`s cerevesian treat is a pretty rare beast in terms of beer types brewed at Dallam Lane
Before the merger with Robert Cain & Co of Liverpool in late 1921 ; Pale Ale .
Though there were a number of brewings of a Pale Ale type at Dallam Lane in ,
The surviving Dallam Lane brewing books ( Dating from 1891 - 1964/5 ) , before the Great War,
A Pale Ale type was a rare entrant , with the majority of the company`s Pale Ale and Bitter Beer
Requirements being met from their breweries in Burton at their times of operation ;
By the Dallam Lane based Walker`s brewery .
Regarding this , I believe that this beer`s rare entries in the 1895 brewing book indicate that
It`s true origins may lie in the Midland Brewery , Burton on Trent which was leased up to
The period to the mid 1890`s by Peter Walker & Sons ( Warrington ) ;
Sadly I haven`t managed to trace any Brewing Records from the Midland Brewery ,
Or from the other Walker`s of Warrington brewery in Burton on Shobnall Rd ;
That established in the latter half of the 19 Th Century by Sir Andrew Barclay Walker *
Or even the other Peter Walker Brewery in Burton , that On Clarence St **
If any readers know of any other Brewing Books & records from the Walker`s *** breweries ;

MALTS & ADJUNCTS
Warminster Malt : 45.75 % Plumage Archer = 1.405 Kg
Crisp Malt : 44.25 % Chevalier = 1.360 Kg
10.0 % FLAKED MAIZE = 0.295 Kg
MASHING
Use a Burtonised Liquor ,
Thoroughly pre warm the mash tun with Liquor @ 95 c ,
- 10 Minutes before Goods In ;
LIQUOR 1.5 " ABOVE the Plates / Filter Bed
1 St Mash Heat : 66 c 0 - + 120 Mins = 6.770 Litres
2 Nd Mash Heat : 67 c + 120 - + 165 Mins = 7.60 Litres
3 Rd Mash Heat : 70 c + 165 - + 195 Minutes = 5.50 Litres
At 195 Minutes , Slowly open the mash tun valve ;
Return any Cloudy / Turbid 1 St Runnings ,
OVER the mash UNTIL CONSISTENTLY CLEAR & BRIGHT ,
Only then send to the Copper and begin Tun Wort Collection .

Sparge @ Clear Wort to Copper + 8 - 10 Minutes
@ 78 c = 6.10 Litres Liquor Allowance
At 1.004 , STOP TAPS / Close Off Mash Tun Valve & Collect Tun Wort ;
ADD LIQUOR
= 20.500 Wort Litres IN COPPER Ex Mash Tun AT 1.038.5 .

After collecting TUN WORT @ 1.038.5 on 20.500 Wort Litres IN COPPER ,
ADD 0.320 Litres of LIQUOR
