Use a Burton On Trent Type Liquor ;
Thoroughly Pre Warm the mash tun with Liquor @ 95 c @ - 10 Mins Mashing In ,
LIQUOR 1.5 " Above the Plates / Filter Bed
MASH : 0 - + 120 Minutes = 9.820 Litres @ 66.5 c
At Taps( 120 Mins ) Clear Wort by return over the mash until clear & bright + 5 Mins ;
Then send to the Copper and Begin Wort Collection .
SPARGING & TUN WORT COLLECTION
At Clear Wort to the Copper + 8 - 10 Minutes ;
@ 78 - 76 c = 27.450 Litres ALLOWANCE
At 1.004 ,STOP TAPS ;
Collect 23.500 Wort Litres EX Mash @ 1.040 IN COPPER
