How Do All ,
Today`s draught of Cerevesian lore comes from a brewing notebook written by a Mr G T Cook ,
who later went on to be both the Head Brewer and Managing Director of Fremlin`s of Maidstone .
The Notebook is in the Fremlin`s archive , Cared for by the ever helpfull and friendly team at
The Kent History Centre in Maidstone , Cat No : U 3555 / F / Box 2 / 2 / 1 .
The notebook covers a period from 1891 with notes on attending lectures related to brewing and beer
Production in Sheffield and other cities ; this being the nature of the most of the entries in the notebook with few brewings recorded . Happily , there are a few brews inclusded from the Neepsend based
Strout`s Brewery Brewery Co Ltd where G T Cook had undertaken part of his brewing pupilage
Under the guidance of the then Head Brewer, Mr Walter Leney of the well known Dover family of Brewers .
When I first looked at the notebook , I assumed it was related to Fremlin`s brewings , with observations and notes on Yeast Spores and other technical observations ; On closer examination ,
I began to consider the gravities of the beers and , the ingredients used ;
I rapidly reached the conclusion that the beers whose brewings are recorded in the notebook were from a northern brewery as the gravity of a certain class of beer , X Ale was 1.020 below the nearest X Ale brewing record I have from Fremlin`s ( 1889 );
Other indicators , such as ingredients employed Viz ,Malts : " Holmes Comm , Holmes Bohemian "
and Bostock`s Yellow Glucose indicated a brewery within the Leeds , Sheffield or Manchester areas .
After pondering this conundrum for a while , I contacted fellow brewing historian Peter Moynihan ,
Who was able to supply the information on G T Cook and his career .
