How Do All ,
As some readers will know , I`ve just completed my analysis of the beers of Henry Bentley & Co Yorkshire Breweries Ltd 1892 - 1894 from the sole surviving brewing book in a public archive
NB : There is an 1896-7 Cost Price Brewing Book in the same collection that`s more of a Gross Wt used and cumulative costs book than it`s earlier dated cousin,
The Brewing Book 1892 - 1894 @ Cat No WYL 2045/288/106 is part of the Bentley`s Yorkshire Breweries collection ; Cared for by the ever friendly & helpfull team at West Yorkshire Archives at Morley Nr Leeds .
This post features my commentary and analysis on the running mild ales of the Eshaldwell Brewery during the period covered by the 1892 - 1894 book , with the other beers following in later posts .
My interpretation and analysis of these records took me a few months and hundreds of individual calculations to balance both the stated Wort volume & Gravity to Copper @ Let Off - X Minutes at the Start of the boil and the Gravity and Wort Barrels @ Cast to Square / F V ;
The project also called for a reasonable ` Guestimate ` of the alpha acids of the hops used , And more importantly their position in the boil / Charge Point & Time @ X Gravity and Wort Volume .
Sdaly the ammount of Liquor used in the Mashing process isn`t recorded in the 1892-4 book , so these are my own interpretation of area & period best practice .

This Beer , merely written in the book as a ` Cursive ` x is the weakest of the HB & Co beers ; Also the most frequently brewed between December 1892 and March 1894 @ 106 brewings ! .
This would have been a running Mild Ale designed to be drunk within a few weeks of it`s production .
A typical Tun grist of 80 - 85 % Yorkshire or another English malt , with the remaining portion taken up by the use of " Smyrna " , another feature of this brew is the use in common with other products Ex Eshaldwell of a cooled and clear Black / Patent malt broth at X Point in the brew for colour and taste profile correction ; Also present in most x Ale brews was a small admixture of Caramel .

The X Ale of Eshaldwell as opposed to it`s more frequently brewed cousin employed Racking Hops, And as per the x Ale was designed to be brewed and consumed within a short period of time , anything up to 3 Weeks from it`s brew date .
The Malts employed were, as with other H B & Co beers employed Yorkshire , Yorkshire Amber and Suffolk malts @ 80 - 85 % with the remaining % taken up by the now ubiquitous " Smyrna " malt .
