How Do All ,
In a break from the current series of 1880`s T & J Usher beer recipe posts ,here`s a handy table showing the results of my latest ` mini project `, An analysis of the bitter beers of the Imperial Brewery , Hereford whilst under the ownership of J & T Jenkins & Co of Tredegar .
The source for these records is The Brewing Notebook of Wm Binnie BH 6 / 1 / 2 from the Mark Binnie & Co collection , part of the Internationally important Scottish Brewing Archive ; cared for by the helpfull and friendly folks at The University of Glasgow , Special Collections & Archives Department on Thurso St in Glasgow .
The first entered up page of the notebook also contains a handy list of the Imperial beers and their selling prices ; here`s the Bitter Beer & Pale Ales,

The beers themselves are a pretty standard range from a provincial brewery , using only Malts in the Mash Tun and Glucose in Copper ; IE No Adjuncts such as Flaked Maize / Rice, as present in many other brewer`s grists of the period Eg : Peter Walker & Sons of Warrington . The Hops used at the breweryy, as may be expected given the brewery`s location were a mixture of local growers produce and , " Sussex 1898 , Cali 1898 " .
